THAT REMINDS ME OF: The white truffles of Alba!

Alba, a beautiful, very old city in the Piedmont (or Piemonte) region of Northwestern Italy. It is a region known for its wines, but also for its truffles.

The TUBER MAGNATUM, also known as the white truffle, is a highly sought after fungi that grows with the roots of various tree species. They grow in a number of places in Europe and Asia, but are quite rare despite that, and the most expensive ones tend to come from around Alba. I’m talking thousands of euros per kilogram.

As with anything expensive, there are frauds out there capitalizing on the high prices. Yep, truffle fraud. In 2012, scientific testing found 15% of supposedly French truffles were actually from somewhere in Asia. Shocking. Perhaps more shocking, the only way to almost conclusively determine what is or is not a fraud is by a chemical analysis of the isotopes inside them. They are looking at the literal traces of base chemical elements inside these things to find where they came from. Tuber magnatum, for example, can be tested for authenticity by measuring their vanadium, zinc, and nitrogen-15 specifically. What a person will do for an authentic dirt fungus.
