TASTING NOTES: Rainier cherry, cherry cola, blueberry custard, and smokiness on the nose. White pepper meets cherry tart flavors. Cranberry and fresh blackberry. Slightly intense tannins with a buttery grip. A medium balanced finish, with oak and acid. Black peppercorn-rubbed ribeye. (AbV 13.8%, pH 3.75, TA 6.10 g/L, RS 0.08%)

VARIETALS: 47% Cabernet Sauvignon, 46% Merlot, 3% Malbec, 3% Petit Verdot, 1% Cabernet Franc

THAT REMINDS ME OF: The clarinet.

Ah, the clarinet. A smooth and versatile member of the woodwinds family. Before the clarinet, there was a single-reed instrument known as the chalumeau during the Baroque period. It had eight tone holes and looked sort of like a fancy recorder. And like a recorder, it had a very limited range.

A German instrument maker gave a chalumeau something called a register key, two in fact. When you look at a clarinet, it’s those metal switches you see. Using register keys, you can change the range of pitches the tone holes create. As time went on, more of these keys were added, and more versions of the clarinet were developed in different ranges, like the alto clarinet, bass clarinet, and contrabass clarinet.
