THAT REMINDS ME OF: Black fruits.

We see it a lot in tasting notes for wines. Either red fruits or black fruits. Sometimes they say blue fruits or dark fruits instead of black, but it seems to be the same thing.

Red fruits are pretty easy to imagine. Cherry, raspberry, cranberry, strawberry, the usuals. Black fruits are, naturally, blackberries and black currants, but also plums, black cherries, sometimes even blueberry. There is overlap, and it could perhaps be thought of more like a spectrum because of that.

It makes me wonder what’s behind these groupings. Clearly they’re grouped by color, but they also must share something flavor-wise that makes it relevant to tasting notes. What is that shared element, on a chemical level? Black fruits have higher levels of anthocyanin, so maybe that’s part of it? But I’m not sure, and I wish I could find some kind of research on it, damn it!
