About Gruet Winery
Founded 1984, Gruet’s specialty is sparkling wines of the Methode Champenoise variety. What is Methode Champenoise you might ask? Well, dear reader, it is the traditional method of fermentation used in the production of sparkling wines and Champagne. The wine ferments once in a barrel, and then undergoes a second fermentation in the bottle. Operating out of New Mexico, the winery’s roots trace back to Gilbert Gruet’s Champagne House in Bethon, France. Family-owned, they’ve reached a place of respect and acclaim among the nation’s top sommeliers.

TASTING NOTES:
Sauvage - “…a bone-dry sparkler, pale straw in color with a delicate but persistent mousse. The aromas of bright mineral and citrus notes tickle the nose followed by touches of green apple, lemon and grapefruit. The finish is structured, flavorful and long.” (AbV 12%, pH 3.05, RS 0.04%, Acidity 76PPM)

Brut - “Wonderful aromas of green apple and citrus with mineral notes make for a delightful start to this traditional sparkler. Our Brut NV offers bright, crisp acidity complimented by a touch of yeast on the delightfully long finish.” (AbV 12%, pH 3.07, RS 1%, Acidity 76 PPM)

Blanc de Noirs - “Pale Salmon in color, the Blanc de Noirs has aromas of berry and pear, complimented by a rich, round mouth feel on the palate. It finishes with a layer of cream and pleasant, warm toastiness.” (AbV 12%, pH 3.12, RS 1%, Acidity 7O PPM)

The film L’Enfant Sauvage tells the story of Victor of Aveyron, a literal wild child. And Victor really did exist. Found in France around 1800 at an approximate age of 12, Victor was a feral child who had spent perhaps 8 years in the wild. Having been without human interaction during key periods of development, he dealt with some key learning disabilities, including being unable to speak or understand tone of voice. In addition to the film, French progressive death metal group Gojira created an album by the same name in 2012 based on the same story.
