Cabernet Sauvignon - “Deep garnet color with aromas of vanilla, black cherry, sage and a hint of licorice. This Cabernet Sauvignon displays flavors of dark berry jam, baking spices, cardamom finishing with silky tannins and powdered cocoa.“ (AbV 14.5%, pH 3.45, TA 0.66 g/100mL)

Merlot - “This single vineyard Merlot displays a deep garnet color. Aromas of ripe strawberries and Rabbiteye blueberries give way to caramel and cedar. Chocolate, cola and spice make this finish smooth and memorable.” (AbV 14.5%, pH 3.50, TA 0.62 g/100mL)

THAT REMINDS ME OF: Chalk. What is chalk?

Limestone.

Alright, so it’s a specific form of limestone, and limestone is a sedimentary rock made up primarily of calcium carbonate. Chalk is an especially soft and porous version of that. The calcium carbonate that creates the chalk comes primarily from ground up shells, and those shells primarily come from plankton. Coccolithophores, one of the largest contributors, are a phytoplankton that forms a calcium carbonate shell around itself known as a coccosphere.

That isn’t to say you’re writing on a blackboard or the sidewalk with plankton skeletons. Well, sometimes you might be. Whenever it’s colored, though, you can rest assured it’s made from gypsum.
