TASTING NOTES:
Chenin Blanc - “Our Classic Fly Series Chenin Blanc is a beautiful aromatic white with herbal aromas accompanied by citrus notes that lead into flavors of green apple and citrus with bright acid.“ (AbV 12.78%, pH 3.45, TA 6.89 g/L)

Red Blend - “This red blend expresses aromas of black cherry, pencil shavings, cedar and vanilla that lead into flavors of black cherry, red plum, spice and hints of oak. Medium tannins and balanced acid.” (AbV 14.2%, pH 3.79, TA 6.3 g/L)

Sparkling - “Inspired by Ste. Chapelle’s iconic Soft Huckleberry wine, this wild sparkler boasts vibrant huckleberries married with the crisp sweetness of apricot and nectarine.” (AbV 11.7%, pH 3.17, TA 7.95 g/L, Chardonnay & Pinot Noir)

BARRELS:
Ste Chapelle red spent 16 months in French oak, 33% new. Sparkling was aged 18 months.

TANGENTIALLY RELATED FACT to help you make conversation over this wine:
In ’53, Tex Avery made a character named Southern Wolf who would appear alongside Droopy in a couple cartoons for MGM. The wolf was memorable for how laidback he was, always calmly going on with whatever he was doing despite being threatened, battered, and blown up. He was also unfortunately rather… Confederate. When Avery left MGM, there were two more cartoons using the wolf that happened to be produced by a William Hanna and Joseph Barbera. The duo would found Hanna-Barbera as an animation studio in ’57, and a character with a lot of similar mannerisms voiced by the same actor hit the scene in ’58. Thus the Southern Wolf was spiritually reborn as Huckleberry Hound.
