“The nose on this vintage has juicy red apple, lychee fruit, dried stone fruit and hints of tropical fruit. Citrus notes on the front palate, with juicy apple following amazing acidity throughout the mouth and a touch of pear on the end with a sophisticated finish.” (AbV 14%, pH 3.31, TA 5.7 g/L, RS <.2 g/L)

Strike while the iron is hot. That’s how the saying goes. Since the 1500’s or so, I think. Before that it was something like, “whil that iren is hoot men scholden smyte.” According to Chaucer, if you believe that guy. And there are variants of it in a ton of languages. I guess not so much variants of it per say but variants of the same sentiment, because the English version didn’t come first. Turns out blacksmiths have existed for a while? Who knew. So the phrase dates back to the old Roman days. Anyway, if you didn’t know, the phrase refers to how a blacksmith must work metal while it is hot enough to do so, otherwise it’s gonna be significantly more difficult or liable to just break. So strike when the iron is hot. Just don’t strike your iron when it is hot. That’ll get you sent to the hospital.
