TASTING NOTES:
2013 - “A fine garnet color in the glass, the wine opens with vibrant aromas of fresh black cherries, forest floor, and baking spices. A savory note of blackcurrant and driftwood smoke on the palate is punctuated by a bright midline of terroir-driven acidity and filled in by classically fine tannins. The finish is long and resonant, with notes of cranberry and salted caramel. Exceptional now, we believe it will continue to evolve for at least a decade.” (AbV 12.6%, pH 3.45, TA: 6.2 g/L)

2014 - “A lustrous garnet hue in the glass, the wine opens with rich aromas of black cherries, forest floor, and baking spices. Seductively savory notes of elderberry and driftwood smoke on the palate are punctuated by vibrant acidity and fine tannins. The finish is long and resonant, with notes of blood orange and incense cedar. Exceptional now, we believe it will continue to evolve for at least a decade.” (AbV 13.2%, pH 3.31, TA 6.6 g/L)

2015 - “A selection of our favorite barrels of the vintage from three mature, own-rooted organic vineyards, the 2015 Selection Pinot Noir is an elegant homage to the windy slopes of the Eola-Amity Hills. Black cherry, anise and wormwood aromas lead into cassis and elderberry with a touch of sandalwood. Focused tannins are balanced with brilliant acidity.” (AbV 13.6%)

Ransom Cook was born in 1794 to Joseph Cook and Mary Ann Tolman in Wallingford Connecticut. The family moved to New York, and Ransom took up his father’s profession of furniture making before heading to Saratoga Springs. Between 1813 and 1836, however, he seems to have switched gears slightly to being an inventor. In ’36, he and Thomas Davenport patented the first electro-magnetic motor in the US. A few years later, he invented and created rules for, weirdly, a prison in Clinton County. For what it’s worth, it was considered fairly humane compared to other prisons. Anyway, he went back to Saratoga and made some other things. New scissors. New lunchbox. A cannon. Most notable of all was a new design for the auger bit, one that has become a standard to this day.
