TASTING NOTES:
Barbera, Sierra Foothills - “Our Barbera is a full-bodied red wine with a smooth mouth finish. It has raspberry and cherry flavors with a typical higher acidity and low tannins. Great when served with stews, red meats as short ribs and tomato pastas.”

“Traditionally known for producing full-bodied reds, Barbera has gained worldwide recognition for its signature characteristics: high acidity, low tannins, and a burst of rich red fruit flavors.“ (AbV 14%, pH 3.3, TA 6.7 g/L, RS 2.0 g/L)

Sangiovese, Fiddletown, Amador County - “Our Sangiovese is an Italian style medium bodied red wine. It has notes of red fruit and cocoa. The typical higher acidity allows it to compliment cheesy pastas and pizzas as well as any beef or chicken dish.”

“It is a nice food wine due to its medium body, high- acid wine with predominately bright black cherry flavors. It is paired well with herby tomato pasta dishes and roasted or BBQ meats.” (AbV 14.2%, pH 3.5, TA 6.1 g/L, RS 0.9 g/L)

THAT REMINDS ME OF: Rubedo.

Latin word for “redness,” but mostly known as the final stage in what alchemists called the Magnum Opus…

So the Magnum Opus is an alchemical process of turning chaos into some sort of perfect “thing” that is the answer to everything. For some, that perfect thing was the philosopher’s stone, which could be a stone, but it could also be a liquid, or even a powder. What does the philosopher’s stone do? Whatever it needs to. The chaos referred to is prima materia, and the classical four elements were derived from it. The process seems to be, in general, to first recreate prima materia by blackening the four elements into some single substance (nigredo), then purifying it white somehow (albedo), probably with more fire, then yellowing it, something to do with sunlight (citrinitas), and then, signaling a success, it turns red (rubedo). Somehow.
