TASTING NOTES:
Zinfandel - “Dark briary fruit of mulberry, white pepper, cigar box, ripe strawberry, grilled steak, spicey, cherry tobacco, sage, and plum lead to an extractive fleshy structure with firm tannin and a balanced long lingering finish.” (AbV 14.5%, pH 3.56, RS Dry @ .2%)

Barbera - “Wine has bright red fruit, ripe cherry, roses, cherry tobacco, spicy with white pepper, sage and cloves showing a bright center palate with a balanced full and long lingering finish.” (AbV 14.5%, pH 3.4, RS Dry <.2%)

VARIETALS: Zinfandel is all Zinfandel, Barbera is 87% Barbera and 13% Zinfandel.

BARRELS: 21 months in French oak.

PAIRS WITH: The Barbera at least is in a food-friendly style.

THAT REMINDS ME OF: Black and White Pepper.

Guess what? Black pepper and white pepper come from the same plant! Yep, it’s good ol’ piper nigrum. And it’s not like they used a different part of it, they’re both from the berries. The difference is that the berries that will become white peppercorn’s skin is removed by soaking them in water before they’re dried out. Removing the skin of course has an impact on the flavor (as well as how long you soak them).

What’s also neat is piper nigrum berries grow in clusters, kinda like grapes! And they turn from green to red!
