The Concrete Egg

TASTING NOTES: “Uboldi Vineyard is located at the base of Sonoma Mountain with rocky volcanic soils. The Sauvignon Blanc vines are over 30 years old running in perfectly sun-filled north-to-south rows. This terroir lends a fresh and vibrant nose of tropical fruits and florals in this refreshing Sauvignon Blanc.” (AbV 13.5%, pH 3.16, TA 6.3 g/L)

THAT REMINDS ME OF: The concrete egg.

It’s literally a giant concrete egg. You put wine inside it instead of a barrel or a stainless steel tank. So… why? Well, first there’s the concrete aspect. We’ve seen people using concrete/cement tanks before, but the reason is that they are sort of a middle ground between oak and stainless steel. Oak allows for greater oxygenation of the wine, which slowly triggers reactions as the wine matures, but imparts its oakiness on the flavor profile. Stainless steel doesn’t impart any flavors, but it doesn’t allow for much oxygenation if any. Concrete/cement both provides some oxygenation, though not as much as the oak, and does not impart a flavor on the wine.

Why the egg? Besides a historical precedent, since several ancient cultures used rounded vessels for wine storage and fermentation, winemakers believe it can help create a sustained convection current as yeast ferments that keeps lees suspended. Usually you have to stir a bit for that.

So yeah, behold the incredible, inedible concrete egg!
