Crème brûlée is burnt cream. Silly, right? Anyway, the earliest written example of crème brûlée appears in a cookbook back in 1691. Seems to have been a pretty bourgeois treat. And then it disappeared from the cookbooks. It only really resurged in popularity and common knowledge in the 1980’s. Crazy.
