TASTING NOTES: “It gives aromas of lemon cream, honeysuckle, toasted hazelnuts and brioche with ripe Red Delicious apple and a whiff of quince paste. Medium-bodied, it has a lovely creamy texture in the mouth, giving flavors of ripe orchard and stone fruits with floral, honey and nut accents. The stoat, or ermine, refers to a variety of mustelids that I can with 100% certainty describe as the cutest weasels in the world. Seriously, they’re adorable. They got tiny legs, and big ol’ eyes, and a little nose, and small round ears. Their body is basically just a furry tube, and that fur is absolutely beautiful. Just so cute, and small, and vicious. These things hunt full-sized rabbits despite being small enough to ride on a rabbit’s back. That’s along with hunting birds, rodents, fish, and anything smaller. Their noodle bodies move around in wild, disorienting ways, confusing their prey. Then they finish it quick with a bite to the back of the neck and drag it off to a burrow. Ermines may even collect more prey than they actually need, just because they can.

So, as long as you’re significantly bigger than an ermine, they are very cute. If you find yourself rabbit-sized or smaller for any reason, avoid at all costs.
