TASTING NOTES:
Rosé - “With zero dosage, Sauvage Rosé’s vibrant fruit flavors of wild strawberry and a hint of cherry really shine on the nose and palate and are complemented by bright acidity.

Good effervescence with beautiful pink hue.” (AbV 12.5%, pH 3.20, TA 7.2 g/L, RS 3.2 g/L)

Blanc de Blancs - “Gruet Sauvage NV is a bone-dry sparkler, pale straw in color with a delicate but persistent mousse. The aromas of bright mineral and citrus notes tickle the nose followed by touches of green apple, lemon and grapefruit. The finish is structured, flavorful and long.” (AbV 12%, pH 3.2, TA 7.2 g/L)

VARIETALS: Rosé is 100% Pinot Noir. Blanc de Blancs is 100% Chardonnay.

BARRELS: 18 - 24 months sur lees.

PAIRS WITH: The Blanc de Blancs pairs well with oysters, sushi and cream sauces.

THAT REMINDS ME OF: The chance that some might not fully understand what is meant by a “sauvage” or zero dosage wine.

At the end of the Méthode Champenoise process, the wine is disgorged, meaning the yeast cells/sediment of the bottle is removed. As this action takes some of the wine too, a final dosage would be added to top off the bottle and provide a little extra sugar.

Zero dosage means, at the very least, no sugar is added. This often leaves the resulting wine very dry and pure. As Gruet puts it, “Wild. Raw. Savage. Untamed since 1989. Gruet Sauvage is for the sparkling connoisseur who appreciates bone dry acidity.”
