Late to the Harvest

TASTING NOTES: “Visually appealing, alive with hues of shimmering burnished copper. Powerfully aromatic, displaying cinnamon, stewed apples and wafts of oven-crisp pie crust. The palate is wonderfully intense with toffee apple flavours, quince paste and botrytis spice all accentuated by a lifted, pithy citrus aromatic which leads onto the bright and persistent finish.” (AbV 11%, pH 3.45, TA 8.54 g/L, RS 176 g/L)

VARIETALS: Sauvignon Blanc

BARRELS: 6 months in French oak, 100% new.

PAIRS WITH: Foie gras, crêpes suzette, crème brûlée, fruit-based desserts, flans, especially when they contain apple. Cheeses, particularly Roquefort.

THAT REMINDS ME OF: Late. Harvest.

A lot of us probably are familiar with what the deal is with late harvest wines, but some might not be. The longer grapes are left on the vine, the more dehydrated they tend to get. As the water content of the grapes decreases, the sugars inside become more concentrated. Ergo, the later the harvest, usually the sweeter the wine.

You might’ve also noticed a funny little word in the notes: botrytis or botrytised. You may be familiar with a little phenomenon in winemaking called noble rot. Botrytis cinerea is a grey fungus that shrivels grapes, concentrating the sugar even more. It typically shows up in in the early Fall season. If the grapes are botrytised just right, the sugar content and acidity are uniquely modified, and you end up with often a very sweet wine.

Today’s wine is both late harvest and botrytised. You can thus rest assured: this wine is sweet.
