About Peterson Winery
For 30 years, Fred Peterson, and eventually his son Jamie, have been producing wine in Dry Creek Valley. With an old-world winemaking philosophy and strong desire to farm sustainably, the Petersons utilize “Zero Manipulation” techniques, with minimal tech and maximum care. Don’t take maximum care to mean intense care, though, as Zero Manipulation favors simultaneously the most gentle and traditional practices possible so that the flavors, aromatics and texture are natural and true to their roots.

TASTING NOTES:
“Brawny and a bit rowdy, this wine isn’t what you’d grab when you’re looking for elegant sophistication. But, it’s perfect for when you want a big wine that’s ready to sip. The intense, concentrated flavors, bathed in buoyant acidity, fill the palate with juicy red fruit. Think dried cherry, rhubarb, pomegranate and bright raspberry merged with traces of plum, blackberry, violet, caramel and earthy oak.” (AbV 12.9%, pH 3.42, TA 0.69 g/100mL)

TANGENTIALLY RELATED FACT to help you make conversation over this wine:
Trousers originally made of 100% cotton for the mid-19th century British military. As with all garments, what was made for the military eventually was adapted for civilians. So now everybody’s got them. They’re mostly earth tones since they tended toward camouflage instead of the priorly used bright colors, which, in hindsight, weren’t the greatest decision for a military force.

And the name comes from the trousers being called pantalones chinos (Chinese pants) in Spanish.
