About Castoro Cellars
Castoro, Italian for beaver, became owner Niels Udsen’s nickname while he was working in Italy. Inspired by this, both a mascot and motto were born for Niels and Bimmer Udsen’s Castoro Cellars. That motto is, of course, “dam fine wines.” Seeking to produce world-class wines from Paso Robles grapes, husband and wife are constantly experimenting and researching the best way to express the appellation with each subsequent vintage. Niels and his mentor Tom Myers work together throughout the process as well, discussing how to effectively handle every variety presented.

Zinfandel Castoro

TASTING NOTES:
Zinfandel - “This delicate White Zinfandel is full of red fruit, and balanced with a bit of sweetness to make this off dry wine clean and brisk in the finish.”

Moscato - “This Moscato has intense floral aromas coupled with an amazingly fresh, fruity, and smooth flavor profile, creating a mouth-watering finish.”
