It was in 1531, one century before Dom Pérignon, that wines from Limoux stepped onto the world stage thanks to Benedictine nuns from the St. Hilaire Abbey, a neighboring village, who created the first sparkling wine in the world: La Blanquette de Limoux.
This is a sparkling wine with delicate bubbles, great acidity and a hint of sweetness. On the palate, notes of acacia honey, soft toasted hazelnut, green apple and citrus fruits. Perfect for every day!
Best paired with salmon or any fresh fish dishes.

yay! It’s surprisingly oaky. I like the Chenin kick, and it’s quite effervescent, but overall not my jam. Toasty bread and yeast on the nose; lightly floral and white fruit on the tongue.
Had this bottle from TSO and I was going to open it up anyway, and certainly didn’t think it would line up with a sale here!
