Seldom do we not have pickled beets in the frig, unless they’ve all just been consumed. Salad, beets and feta or Gorgonzola, yup, the only way to partake of raw green stuff.
Had a roasted beet salad last night - beets, salad leaves, onion, pecans, and large “croutons” topped with melted brie and/or blue cheese. Use beet greens in collards or mix with other greens in a Green Shakshuka!
