As soon as you open this 2018 Cabernet Sauvignon, you will get some ripe plums and black berries aromas. Sometimes you can get aromas of brown sugar and even on the palate. If you let it rest for 10 minutes, you can get more fresh fruit aromas.
We have bottled this wine after being cellared for two years. We’re always trying to get the structure, flavor, and everything that our fruit wants to give us in this metamorphosis. Enjoy this California Cabernet with friends and family.

It was a pleasant surprise when Monday brought notification that a bottle was going to be dropped off by the Big Brown Truck on Tuesday for tonight’s offering. The anticipation was doubled after reading this would be a Friday 24 hour only sale. Upon receipt of the bottle, I was equally pleased to see it was Prohibido Wines 2018 Cabernet Sauvignon. “I recognize this producer”, I thought to myself, and then researched. Back in May of 2019, I ratted a bottle of their Pinot Noir on this very site and enjoyed it.
I bought myself a Coravin in December, so on Wednesday night, I used the Coravin for glass #1. I let the wine sit in the glass for about 15 minutes, swirling and observing the dark red center of this 2018. I prefer to drink Cabernet with a little more age, so it would not be my first instinct to select this bottle off the shelf at this time. Regardless, rat duty calls, and I taste bright fruit like black cherry and pepper; the first glass goes down quickly, paired with lemon garlic and herb chicken with roasted broccoli and mashed potatoes.
24 hours later, popped and poured. The bright fruit is still present, and I’m tasting a mild dark chocolate on the finish.
I’m pairing the wine with delicious Indian Food (from a fabulous Alameda Indian restaurant) and it seems food friendly. I’ll save one glass for tomorrow evening after work to see how it is after 24 hours.
I don’t see this wine as terribly complex, but given the youthfulness, it is certainly not off-putting. I could see this served as a BBQ gathering, or also a weeknight sipper. Both offerings are super competitively priced!

Great way to start the week…email from Alice saying a Lab Rat bottle coming my way. On arrival was excited to see it was 2018 Prohibido Cab.
When first opened nice deep garnet color. On immediate taste and smell little heat with strong alcohol but it quickly mellows and opens up with about 15-30 minutes in the glass. Opens to a very smooth tasting approachable wine. Nice blackberry, raspberry little licorice even on smell. I taste blackberries, raspberries and cherry. No oak. Nice by itself. Had filet mignon and it was nice with that as well. I do not think it could stand to another cut of steak like a aged Cab can.
Corked bottle…second night opened let breathe. I did not enjoy the second night as much as the first but drinkable. Went well with pizza!
Young Cab that is definitely not to complex but a decent smooth everyday wine alone and with food. Definitely better in my opinion on first night of opening. Great QPR had thought if offered around $10 was great price but seeing Casemates price definite deal! I will be getting a case!

At this price, with the above rattage, and the fact that I’m low on cabs and my gf prefers them, I’m in for two cases.
