2023 Tooth & Nail Squad Series Cabernet Sauvignon, Paso Robles
The 2023 Cabernet Sauvignon bursts from the glass with aromas of plum, black cherry, sandalwood and tobacco leaf. A luscious mouthfeel delivers velvety flavors of black fruits, boysenberry, crème de cassis, mocha and vanilla with hints of gravelly stone. Plump tannins unfold into a soft, enveloping finish.

Winemaking
The grapes were harvested over a period from September 12 through October 9, 2023. After destemming the clusters, Director of Winemaking Jeremy Leffert and his team fermented the fruit in a combination of 10-ton stainless steel tanks, four-ton concrete fermenters and large oak tanks. After seven to 10 days of warm extraction, the new wine was pressed off the skins and into stainless steel tanks to finish fermentation, a maneuver designed to maintain a pure tannin profile while avoiding any uptake of phenolic astringency. After fermentation, the individual lots were aged in French oak barrels (25% new oak) for 10 months prior to final blending with small complements of Petit Verdot and Malbec to flesh out the mouthfeel. The wine was bottled unfined and unfiltered. The resulting wine has the verve, tenacity and vibrancy that you have come to love and expect from Paso Robles Cabernet Sauvignon.

I was very excited to receive this wine and try it out for you guys. I was so excited that I decided to smoke and braise a chuck roast for a pairing! I opened the bottle a couple hours before dinner.
On twist the wine had mild aromas typical of a Cab. Very pretty wine and I loved the art. Big Tim Burton fan so reading a little about the winery was very cool. Unfortunately at the time of my review the QR code and AR features were not working.
Once dinner was ready I returned and found the aromas had opened up beautifully, really showing off it’s legs and getting those blackberry and black cherry aromas. On pour I got a lovely deep ruby color and found the wine to be delicious.
Good tannins for my taste and those black fruits really balanced well. I didn’t quite find the vanilla’s and mochas, but I’m no Bacchus. I thoroughly enjoyed this wine and it stood up very well to the roast. After dinner it was paired with dark chocolate (72%) and it was fantastic. This wine will stand up to just about anything you can throw at it.
Came back the next day to polish it off. I didn’t think it had evolved much realistically. It tasted much sweeter, but I was pairing it with a business law 3000 class…
Overall, a great wine. 90 points on WE but I think it would easily stand up to the 92-94 point wines I buy from the warehouse…
At this price, I am easily in for a case. Maybe even 2.
Recipe:
1 Disposable Lasagna tray with foil
1 2.5-3lb Chuck Roast
2 White Onions
Mini Taters
Carrots
Mushrooms
Unsalted beef broth
Prep: Rinse the roast and pat dry. Heavy coat of freshly crushed black peppercorns, then a coat of Kinders “The Blend” (salt, pepper, garlic)
Cook: On the pellet smoker with a drip pan under it at 200 degrees till Charles was 170 internal (about 3-4 hours at 200).
Took the catch pan with the fats in it and added onions to the bottom. roast on top of the onions, then veggies in the corners (your pick) and 1 carton of unsalted beef broth (Could use 1/2 red wine 1/2 broth). Covered with foil, bumped pellet grill to 350 and returned the tray to the grill.
At 205 internal I started checking for probe tenderness. Wasn’t quite there so I checked again at 207 then again at 210. Finally super tender. (this took about 60-70 minutes.
Set my oven to “Keep Warm” and stuck it in there till dinner.
No pans to clean up, the grill stayed clean cause of the drip tray, and it was delicious to boot!

Well, I picked this up on Meh in mid June for $2 more a bottle on a case. Haven’t tried it yet.
