Must clarify what wine. We’ve had a wonderful Honey Sher Mead that works great as a super chilled syrup over ice cream. I’m sure it would make a fantastic ice cream too…
I think wine sorbet might be better.

Recently mixed some 2006 Kent Rasmussen Late Harvest Viognier with banana sorbet. Delicious!
