About Gruet Winery
Founded in 1984, Gruet’s specialty is sparkling wines of the Methode Champenoise variety. What is Methode Champenoise? It is the traditional method of fermentation used in the production of sparkling wines and Champagne. The wine ferments once in a barrel, and then undergoes a second fermentation in the bottle (en tirage). Operating out of New Mexico, the winery’s roots trace back to Gilbert Gruet’s Champagne House in Bethon, France. Family-owned, they’ve reached a place of respect and acclaim among the nation’s top sommeliers.

TASTING NOTES:
Brut - “Wonderful aromas of green apple and citrus with mineral notes make for a delightful start to this traditional sparkler. The Brut NV offers bright, crisp acidity complimented by a touch of yeast on the delightfully long finish.” (AbV 12%, pH 3.07, RS 1%, 75% Chardonnay 25% Pinot Noir)

Blanc - “Pale Salmon in color, the Blanc de Noirs has aromas of berry and pear, complimented by a rich, round mouth feel on the palate. It finishes with a layer of cream and pleasant, warm toastiness.” (AbV 12%, pH 3.12, RS 1%, 75% Pinot Noir 25% Chardonnay)

Rosé - “With zero dosage, Sauvage Rosé’s vibrant fruit flavors of wild strawberry and hint of cherry really shine on the nose and palate and are complemented by bright acidity.” (AbV 12.5%, pH 3.02, 100% Pinot Noir)

TANGENTIALLY RELATED FACT to help you make conversation over this wine:
The phrase “rootin’ tootin’” has typically been associated with the Old West, very kitschy at this point, but where did it come from? The first use on paper appears to have been in 1875, but it could’ve existed prior to then. Taking the phrase apart, you have “rootin’” referring to cheering, and you have “tootin’” which could refer what brass instruments sound like. Combine the two, and you have something loud and boisterous. Considered “frontier slang,” the phrase had a resurgence with Western movies of the early 20th century, and then in the Western sub-genre that persisted up through the 50’s.
