About Gruet Winery: “Founded in 1984, Gruet Winery specializes in Méthode Champenoise sparkling wines. Family-owned and run, the New Mexico-based winery produces Pinot Noir and Chardonnay-based sparkling wines and a small collection of still wines, with roots originating from Gilbert Gruet’s Champagne house in Bethon, France. TASTING NOTES:
Brut - “Aromas of green apple, citrus, and minerality make for a delightful start to this traditional sparkler. Our Brut NV offers bright, crisp acidity complimented by a touch of yeast on the delightfully long finish.” (AbV 12%, pH 3.07, TA 7.6 g/L, RS 8 g/L)

Blanc de Noirs - “Pale salmon in color, our Blanc de Noirs has aromas of berry and pear, complemented by a rich, round mouth feel on the palate. It finishes with a layer of cream and pleasant, warm toastiness.” (AbV 12%, pH 3.12, TA 7 g/L, RS 8 g/L)

VARIETALS: Blanc de Noirs is 100% Pinot Noir. Brut is 80% Chardonnay 20% Pinot Noir.

BARRELS: 18 months.

PAIRS WITH: All styles of food.

THAT REMINDS ME OF: Brutus Buckeye, ladies and gentlemen. Let’s give him a hand. Wonderful mascot. Breathtaking. That big round head, that small hat, the constant expression of mild surprise.

He first hit the scene in ’65, selected because the buckeye is Ohio’s state tree. Bit of a departure from the norm at the time of animals and people for mascots. He first showed up in October of the year, but he didn’t have his name until after a campus-wide contest a month later.
