TASTING NOTES:
Cuvée - “Moderately dark in color, this wine presents a complex nose with dark fruits, earth and hints of woodruff. The palate presents well-sculpted tannins supported by a good acid backbone that leads to a long, lingering finish echoing the fruits first found on the nose.” (AbV 14.6%, pH 3.7, TA 6.59 g/L)

Carignan - “A fruit-forward expression of dark cherry, plum fruits, fresh roasted coffee, wildflowers and a hint of ‘sauvage et animale’ wildness. With forward tannins and plenty of structure, this wine will take its time to mature and evolve.” (AbV 13.4%, pH 3.5, TA 6.2 g/L, RS dry)

Zinfandel - “Ethereal spice aromas derive from this mélange of Zinfandel, Carignan, Flame Tokay, Black Prince and Mission grapes. On the palate, you get pinot-like smoothness and flavors of layered plum, dark cherry and spicy pumpkin with just enough spice to remind you that this is still a Zinfandel.” (AbV 14.3%, pH 3.58, TA 5.8 g/L, RS dry)

VARIETALS: Cuvée is mostly Carignan with Zinfandel. The Carignan is 90% Carignan and 10% the almost extinct white grape Monbadon, plus a tiny amount of Alicante Bouche and Flame Tokay. Zinfandel is apparently Zinfandel, Carignan, Flame Tokay, Black Prince and Mission grapes.

THAT REMINDS ME OF: That old phrase, “In like a lion, out like a lamb.” Usually it’s about March. And usually it is about the weather.

This is because March has generally been a turning point in the weather. Beginning of March is more intense than the end, theoretically, as things transition from Winter to Spring. But why a lion, and why a lamb? I mean, we are generally aware that lions are more intense than lambs symbolically and, you know, in real life. But those specific animals? Well, guess what sign of the zodiac is around at the start of March and which sign shows up around April? Leo and Aries!

Or it’s because both animals have some biblical significance. Take your pick.
