About Pech Merle Winery
Founded after a visit to Pech Merle (pesh-mael) in the Lot River Valley of France, Pech Merle Winery deals in Sauvignon Blanc, Viognier, Rosé, Pinot Noir, Zinfandel, Cabernet Sauvignon and Cabernet Franc, sourced from their ideal California AVA’s. In addition to those, they produce “black label” wines with a production cap of 175 cases of specialty Viognier, Oehlman & Bella Luna Pinot Noir, Alioto Zinfandel and Cabernet Franc. Winemaker John Pepe, with 40 vintages under his belt, is dedicated to creating luxury class wines recognized both by judges and patrons.

TASTING NOTES:
Syrah Rosé - “With a brilliant nose of ripe ruby red grapefruit, this medium-bodied and pleasantly rounded wine has a lively, yet unobtrusive texture. A light, yet solidly fruity Rosé with a palate full of well-defined flavors like white raspberry, soft hibiscus and strawberry rhubarb.”

Sauvignon Blanc - “The aromatics of this Sauvignon Blanc are stunning: pink grapefruit, early white nectarine and a hint of lemon blossom. The wine itself is clean, crisp and refreshing with a beautifully bright acidity and great balance.“

Despite being named after him, the principle of Occam’s razor did not exist until several centuries after the death of William of Ockham. The idea of Occam’s razor is that when you are presented with competing potential solutions to something, often the simplest or the one with the fewest assumptions is favorable.

See, the white wine glass is the optimal solution here, but why don’t we throw Occam’s razor out the window. Going to assume you have a waffle iron, okay? Don’t use the waffle iron. You assume you have a waffle iron, but you can’t find it. Instead, you come across what you assume to be some kind of crock pot. You assume wrong. It is actually a safe. I assume you know the combination, right? It’s your safe. Anyway, assuming you open the safe, what would you find but your white wine glasses! It was so simple!
