Our favorite foods with this wine are: Grilled meats such as ribeye steaks and NY steaks, proscuitto and Humbolt Fog cheese on a baguette and any savory or spicy dish.
Vintage and Winemaker’s Notes
Harvested in the late portion of the season, we rely on both chemical analysis and flavor analysis to determine ripeness. The cabernet sauvignon clusters are hand harvested, hand sorted, destemmed and lightly crushed. We only use gravity to move the crushed crapes and juice. Fermentation times in 2014 averaged 23 days, with the shortest being 14 days and the longest being 30 days. No pressed wine is used in making the Moonspell. The free run juice is barrel aged for 18 months, thoughtfully blended by our winemaking staff and bottled.

Did you use it for something else? Was it to make this an earlier/easier drinking Cab Sauv. (reduce the tannin/astringency)? Showcase a particular attribute of this vintage/vineyard(s)? Religious objection? Personal preference?

We totally understand. There are definitely strong opinions between cork, screwcap and other closures! The technology has come so far that we are super comfortable with using screwcaps and their aging potential. There is a great way to open the screwcap. Twist the skirt, (the bottom part of the screwcap) and roll up your left sleeve. Start with the cap at your elbow and roll it down your arm. The cap will come off in your hand and you’ll make a lot of people smile at the table. Rollin Soles, founding winemaker at Argyle, taught me this trick back in 2005/6 ish. I told him I’d give him credit for 6 months then it was mine. He did this at a winemaker dinner we co-hosted and it was awesome! We do not enjoy “corked” wines!
@pete0744@rjquillin We use both cork and screwcap closures. Because of winemaker preference we have moved to screwcap for more predictability. If the consumer does not know how to tell if a wine is corked they can get a corked wine and think we are making bad wine.

If the winery rep isn’t deep into the techy details, they may not know that you’re asking about oxygen transmission rates and the reason for selecting a particular value for that characteristic of a screwcap closure.
I’ll pile on by also asking your opinion on how much of a wine’s ageing is due to oxygen-driven processes vs non-oxygen-dependent processes.

Our selected screwcap allows for oxygen transfer but at a slower rate, .006 PPM/year. I once did a redirect of a UPS package to store, and they told me that “this time” they wouldn’t charge me a “storage fee” after 24 hours, but their usual policy was to charge for every day they kept your box after the first day. I think the UPS stores are independently-owned but said “UPS Store” with logo on the sign. If that’s true of other UPS locations, we will be in for a rough road with UPS.
Our local UPS stores charge us to have wine delivered to them never had that with FedEX. Checked with our local CVS and he “thinks” they can accept but has to get back to us…too bad, we would have placed an order for this today.

so… full disclosure… I sell this wine and have worked with several vintages, 2010-2014 - I’ve always found it very baby-bordeauxish - lush, firm backbone, with mineral notes. Our “fans” in retail and restaurants buy it because it’s food-friendly, easy to sell and is a steal (at $29 normal) for a Walla Walla cab. This is a great deal, but again, I am not without bias.
After reading the notes here, (thanks to the vintner for your info and interaction), and reading some stuff on the internet, I jumped in for a case. There was more information for earlier vintages than the 2014, all reviews were solid, and the retail price seemed to be about $29 a bottle. Looked like a no brainer to me and I would have gotten more if I didn’t have a bunch of cases on hand! Check out @tastebud 's comment above. That sealed it for me!

Question for the Vintner, after watching the video, I see and understand the vines planted in different directions, due to the lay of the land. My question is “Do you notice how (or if) this affects the taste of the grapes, since the vines catch the sun rays differently?”

@winecaseaholic Great question! This is Sean (winemaker) stepping in, due to the different directions of the blocks they do ripen at a different pace. I do not think this has affected the taste of the grapes. There are ripening variables between the blocks because of their location but I do not see the variables as much with the flavors of each varietal. We target 3 to 3.5 tons/acre in each block. We have to watch the irrigation because the lower parts of the blocks have more vigor with the water draining downhill.
This is Annette (owner of winery and vineyard) stepping in, we actually selected the orientation of the blocks for their best ripening potential. This vineyard was GPS blocked and then planted. We could have possibly added around 4 more acres but chose to use this block orientation because we wanted the best ripening opportunities for the vines.

Although I’m feeling like a wine hoarder lately based on the cases stacking up, with the vintner in and the positive CaseMates peeps notes, we’re in yet again (how many days of Christmas are there?}
My Casemates account is claiming that my order was delivered last Wednesday, but I did not receive it. UPS tracking said it was signed for my Jorge on a dock in Sonoma CA. I live in Maryland, with nobody named Jorge, and I have no dock. UPS is saying the shipper requested it be returned back to them rather than be shipped to me. Have made attempts through the “contact us” link but no response from Casemates. Would love an option to speak to a human, but at the very least an autoreply acknowledging that my inquiry didn’t go into some void would be nice…

@mariauy I ordered some cheese from the old site that WCC shipped, it turned around halfway to me and returned to them in Sonoma, Torres is apparently enjoying the cheese along with the wine Jorge snagged. UPS delivery doesn’t work for casemates or woot - looks like I’m out over there like here.

First order since change to UPS. Got notice that UPS “attempted delivery” today at 4:04 pm and nobody was home. In reality, there were 3 elderly grandparents, my 21 year old child and two of his friends, and my DH home at the time. Nobody rang the (working) doorbell or knocked. UPS fail. Trust me, with all those folks in our house, we can use more wine. Hopefully this will not be an ongoing issue with UPS. Hundreds of FedEx deliveries without ever missing one.

I have my opinions but I’d love to hear expert commentary whether these numbers are too high, too low or just right.

so… full disclosure… I sell this wine and have worked with several vintages, 2010-2014 - I’ve always found it very baby-bordeauxish - lush, firm backbone, with mineral notes. Our “fans” in retail and restaurants buy it because it’s food-friendly, easy to sell and is a steal (at $29 normal) for a Walla Walla cab. This is a great deal, but again, I am not without bias.
After reading the notes here, (thanks to the vintner for your info and interaction), and reading some stuff on the internet, I jumped in for a case. There was more information for earlier vintages than the 2014, all reviews were solid, and the retail price seemed to be about $29 a bottle. Looked like a no brainer to me and I would have gotten more if I didn’t have a bunch of cases on hand! Check out @tastebud 's comment above. That sealed it for me!

Question for the Vintner, after watching the video, I see and understand the vines planted in different directions, due to the lay of the land. My question is “Do you notice how (or if) this affects the taste of the grapes, since the vines catch the sun rays differently?”

@winecaseaholic Great question! This is Sean (winemaker) stepping in, due to the different directions of the blocks they do ripen at a different pace. I do not think this has affected the taste of the grapes. There are ripening variables between the blocks because of their location but I do not see the variables as much with the flavors of each varietal. We target 3 to 3.5 tons/acre in each block. We have to watch the irrigation because the lower parts of the blocks have more vigor with the water draining downhill.
This is Annette (owner of winery and vineyard) stepping in, we actually selected the orientation of the blocks for their best ripening potential. This vineyard was GPS blocked and then planted. We could have possibly added around 4 more acres but chose to use this block orientation because we wanted the best ripening opportunities for the vines.

I know the 2013 was a excellent wine but not so sure of the 2014.
@Mar6867 This can mean either (a) I have tried both and don’t like it as much of the 2014, or (b) I have tried the 2013 and loved it but have not tried the 2014

My Casemates account is claiming that my order was delivered last Wednesday, but I did not receive it. UPS tracking said it was signed for my Jorge on a dock in Sonoma CA. I live in Maryland, with nobody named Jorge, and I have no dock. UPS is saying the shipper requested it be returned back to them rather than be shipped to me. Have made attempts through the “contact us” link but no response from Casemates. Would love an option to speak to a human, but at the very least an autoreply acknowledging that my inquiry didn’t go into some void would be nice…

@mariauy I ordered some cheese from the old site that WCC shipped, it turned around halfway to me and returned to them in Sonoma, Torres is apparently enjoying the cheese along with the wine Jorge snagged. UPS delivery doesn’t work for casemates or woot - looks like I’m out over there like here.
@arianaWCC FYI New tracking info has not been received. I did receive a response from Casemates today, though, which has me even more confused - now I’m not sure if they are planning to send it out at all?
Sounds like Jorge is really living it up with all our wine and cheese, though, Merry Christmas to him I’m very jealous!
First order since change to UPS. Got notice that UPS “attempted delivery” today at 4:04 pm and nobody was home. In reality, there were 3 elderly grandparents, my 21 year old child and two of his friends, and my DH home at the time. Nobody rang the (working) doorbell or knocked. UPS fail. Trust me, with all those folks in our house, we can use more wine. Hopefully this will not be an ongoing issue with UPS. Hundreds of FedEx deliveries without ever missing one.
I should have bought more. A lot more! Just finished my last bottle.
