An inviting, smooth wine with black cherry and plum aromas pouring from the glass. Flavors of bold dark fruits and charming notes of baking splice combine with a juicy mid palate and pleasantly firm, dry finish.
8-10 days macerations on skins, aged in 40% new French oak. Sourced by DeLille’s winemaking team from established and up-and-coming vineyard sites throughout the Columbia Valley, including Candy Mountain AVA.
Best paired in the company of family and friends, Metier offers a balance of structure and approachability that can accompany a wide variety of foods.

We got the Metier 2021 Cab Sauv.
Beautiful, clear, medium purple color.
Aroma of raspberries and some alcohol heat.
First sip - this has some definite strong, tight, sharp tannins, more green than black. I double checked the bottle, it shows 2021 vintage. The alcohol also comes into play, though the label shows a not-excessive 13.9%. Some black tea and red fruits - bright, more like raspberry and cranberry. Good finish with high acidity.
20 minutes later, still tastes young and dominated by the tight tannins.
Next day, no noticeable changes. Overall, it seems more like a power pinot profile moreso than a Cab. Regardless, it seems to be still rather young and hopefully the tannins will mellow with some age. I suppose I should mention that I prefer older Cabs.
From Michelle on day 2. Beautiful deep color. Watery? Tannin y. Long legs. Gas smell? But subtle. It’s fine. Not great. Gas goes away the longer it sits in the glass. Still not my favorite. At least. Not today.
I apologize for the brevity, but I’m currently in France and after putting shutters up in my home in Florida, I was able to take a couple tastes of this wine the night before my flight.
The wine is easily approachable a very light to medium Cabernet. It’s a drinkable wine but isn’t overly complex. I tasted plum and blackberry and I enjoyed drinking it, Not what you think of compared to a typical California cab.
Lots of mainstream material out in the worldwide-web-o-sphere apparently…
The Scarved One. 91 Points. Structured and deep, this full-bodied wine is saturated in black fruits and blueberries, dark chocolate and light oak spices. For an affordable price range it packs a lot of depth, and can age for several years. Drink now or hold. 03/24
Spectacle. #66 Top 100 2023. 91 Points. Offers good energy and refined flavors of blackberry, dusky spices and black olive that build structure toward medium-grained tannins. Drink now through 2031. 16,000 cases made. —Tim Fish 11/15/23
M. Dunnuck himself tasted and had this to say. 91 points. A terrific value that would probably run you three times the price if it was from Napa, the 2021 Metier Cabernet Sauvignon has textbook leafy herbs, tobacco, and darker currant fruits in a medium-bodied, elegant, balanced package. It has classic Cabernet herbal, floral, spicy notes and is well worth drinking any time over the coming decade or so. Maturity 2023 - 2033 6/14/23
Wine Enthusiast. 90 points. A smooth as silk mouthfeel and velvety tannins make this one easy-sipping Cabernet Sauvignon. Dark plum and red apple aromas are flanked by spicy bursts of cloves and juniper berries. Flavors of ripe blackberries, black tea and dark chocolate lead to a long finish. — Michael Alberty 7/1/23
Vinous. 90 points. The 2021 Cabernet Sauvignon Metier is unexpectedly fresh with zesty red berries, peppery florals and wild herbs. It boasts tart red fruits and inner herbal tones with mineral underpinnings, all kept nicely in check by zesty acidity. This finishes with a staining wild raspberry concentration and grippy tannins that frame the style well. The Metier Cabernet Sauvignon is produced mostly from Candy Mountain fruit. Eric Guido 10/22
Wine & Spirits. 91 points. This attractive new cabernet from DeLille has a lovely, mildly backward scent of pine, pepper, and tobacco. The flavors reflect a dark cherry cast, but delivered firmly, with grippy cherry-skin tannins. —P.J.C. 4/23
O (what do you say) Bargreen. 90 points. The 2021 Metier Cabernet Sauvignon is a really good value that is nearly 100% varietal. Roasted herbs and dark cherry dominate the nose with tobacco leaf accents. This shows good balance with medium bodied dark fruit and coffee ground flavors. Drink 2023-2028
@kaolis wow, reading the first few reviews and thinking, that isn’t the same wine I tried… until I got to the vinous review, which was exactly what I experienced. Thanks for posting!

2021 DeLille Métier Cabernet Sauvignon - $30 - 16.66%
I have never posted on here and don’t buy that often but I have to comment on these. DeLille is a wonderful wine maker, their D2 is a phenomenal wine, not to mention their single vineyard stuff especially from Red Mountain. If you like more restrained old world Cabernet (like myself), this is your jam. If you like the super ripe CA stuff, you will not like this. I never see their bottles on one of these sale sites. I bought a case.
@MacMiami Thanks for your perspective. My style Cab as well. I don’t need to be slapped in the face with oaky lush fruit. I like restraint and complexity.
@MacMiami really appreciate your knowledge on the wine. I appreciate more of a classic cab, and would rather the fruit be picked early than late. I’m now intrigued to buy a 4 pack. Thank you.
Love Washington Cabs, love DeLille as a winery. Métier isn’t my favorite offering from them (as MacMiami says, D2 is amazing), but still an autobuy from me.
@fermentedwisdom@ttboy23@Winedavid59 Honestly that was the most classic Woot wine: both the label and the quality of it for something like a $10 Cabernet. I brought 1/2 case of it to sister-in-law’s wedding reception back in those days. The wine was very well liked. The husband apparently was not, so that didn’t last long. People talked for years more about how they liked that wine, but not the temporary husband that much.
@fermentedwisdom@ttboy23 @Winedavid59 I was hoping you have a museum of that stuff! Something we can all make a pilgrimage to in our elder years (which is now, apparently). Free admission with screaming monkey. Are there still the organized visits with a few Northern California winemakers?

@Pagefault it’d be nice if they would show up.
Hard to believe it’s so long ago, but the label image on white with a black border reminded me of something…
@pmarin any left? I’m old but that was before my time
@pmarin @ttboy23 I’ve got one last bottle hiding somewhere in the rack…
@fermentedwisdom @pmarin @ttboy23 loved that label. so fun. thanks.
