Cook polenta and let it set in a loaf pan. Slice and layer horizontally with gorgonzola cheese, tomato slices and onion slices. Cover with tomato sauce and bake 'til bubbly.

Cook it with vegetable stock, add cream cheese and then Monterey Jack. An amazing cheesy polenta to serve with shrimp or anything else really.
