I bought some blueberries a month ago and left them out. Though I don’t recommend it, they started to dehydrate beautifully. I tried some a few days ago and they were perfect. Still a bit of juice and super-concentrated. Now I wish I’d done more like that.
This is highly YMMV depending on your climate so I son’t necessarily recommend “Ignore on kitchen counter for a month” as a reliable technique.
If anybody knows, the tiny Maine blueberries are amazing but many won’t like them because they are small and tart. But my memory is from picking them from a mountain in Maine so that probably made them even better.
Fermented.
