Grapes are picked at the peak of ripeness in the early morning hour to preserve maximum fruit concentration.
Fruit is fermented for up to two weeks on the skins; up to 70% whole berry fermentation.
Fruit is de-stemmed, crushed and cold soaked for 24-48 hours for optimal color extraction and concentration, followed by malolactic fermentation.

Lab Rat report! Was surprised to find a bottle on my doorstep delivered by a masked man who mumbled a few incomprehensible murmurs about trying it soon (TBH I was very lucky as I was about to leave for a few days and would have both missed the bottle and this sale, but the Meh was on our side and it all worked out). After cautiously accepting the bottle I immediately went to find a few other volunteers.
So I’m a red wine fan with a broad appreciation of the common types (CS, Merlot, PN, CF, Grenache, Syrah, Zin and PS; though I’m not a huge fan of Malbec). My flavor profile tends to the tilt to the more fruit driven spectrum as opposed to the dirt/dust mineral side. My two friends I roped in was to someone that is starting to appreciate wines (friend 1) and another that was a complete neophyte (friend 2) with very little experience. In the middle of our tasting we were fortunate to have one more person (friend 3) come in who has a decent amount of experience wines, apparently her husband is an importer of Italian wines and she is able to taste many, though she prefers to drink mainly white wines.
On to the actual report. On opening the color was a nice dark purple, clear with no real noticeable legs on the swirl.
The nose was very pleasant on PNP and through the few hours we tasted it. No alcohol at all for any of us. I got whiffs of violet and cassis. My more experienced friend smelled chocolate and remarked on further reflection, “Brownies!”. My neophyte friend didn’t have much to report.
Flavor wise we all enjoyed it. I got the blackberry and dark fruit profile with a nice crisp finish; friend 1 also tasted the dark fruits, he also tasted the chocolate and thought there was a pepper bite that was good; friend 2 had just brushed his teeth so his initial taste was off but he said that as time went on he quite enjoyed it but refused to report any odors or flavors; and finally friend 3 enjoyed the wine quite a bit she didn’t have a chance to report actual flavors but found it very good, enough that she snapped a picture of the bottle and asked about the website on where this was going up.
Everyone remarked that the bottle was very soft, not acidic and not tannic at all. This was definitely a wine that you could enjoy by itself. We tried it with some home made salami and it didn’t really help or hurt it. It may do better with some other foods but I’m ok with it being a stand alone. It had a lot going on with a good entry, mid palate, and finish. Both friends 1 and 3 were surprised that it was a cab sav and I’d agree that it is not your typical CS, I’d shade it more towards a very well made Merlot. It was a very well made wine and now seeing the price makes this a steal.

Uncorked and poured a taste of the Heritage as we started to prepare dinner. It clinged to the glass. The initial nose was slightly sweet with alcohol, the color wass medium ruby/purple moving to clear at the meniscus. Tasted of dark chocolate, cherries and earthiness, slightly sweet from the cherries but well balanced with delicate tannins. It’s good. We wanted more but held off and opened some Riesling while we let it breathe.
Waited 90 minutes or so while homemade tortillas, vegetables, black beans and roasted chicken were prepped. Another glass and a half each with tacos. Easy drinking. The bottle is done. Dinner is over. Wife dozing next to me, re-watching Game of Thrones. Life is good.
On second tasting, it was slightly sweeter, very smooth and tasted more of an everyday drinker. One of us likes tannins, the other does not. This wine struck a nice balance that we both liked. It wasn’t as sweet as what has become common of the everyday cabs. Our favorite wines have been the Wellington selections that are now sadly gone. Is this Wellington? Nope. But still a solid bottle…Weekend is officially on!
Wanted to post a follow up report. I took a bottle to a pop-up ramen restaurant where you can bring your own alcohol if you like. So I did and I shared it to some of my fellow guests. Generally the same tastes and notes as last time. Definitely an easy drinking cab that has a really good all around character. This isn’t a heavy food wine and stands out by itself. Another diner really liked it and again was shocked that it was a cab, she professed to be a merlot fan and this reminded her of it.
