Tasting Notes
Our Red Label Cabernet Sauvignon comes from the prestigious Seven Hills Vineyard in The Walla Walla Valley AVA. This award-winning vineyard produces some of the best fruit we have ever seen and we are extremely grateful to have the opportunity to work with it. Endless layers and subtleties with the core Cabernet flavors always shining through. A great mix of red and blue fruit, soft and jammy with mild tannin structure leading to a long finish on the end.
Seven Hills Vineyard was first planted in 1980 and is one of the first commercial vineyards in the Walla Walla Valley AVA. With an elevation of 850 to 1,050 feet, the site has excellent soil and air drainage and is one of the most technologically advanced in the industry. The vertically trained canopy, controlled cluster spacing, and sunlight exposure generates uniform fruit ripeness. Soil moisture is monitored daily by computer with sophisticated drip irrigation scheduled to augment vine development yet limit excessive canopy growth. Yields are strictly controlled to assure ultra-premium quality.

Founded in 2011 by brothers Sean, Ryan, and Matt, Marshall Davis creates small-batch vineyard-specific wines. Pinot Noir and Chardonnay some from their estate vineyard in Oregon’s Yamhill-Carlton AVA while full-bodied Cabernet Sauvignons and Syrahs are produced from some of the most prestigious vineyards in Washington’s Walla Walla AVA. Stylistically, wines are focused and varietally correct. Winemaker Sean Davis believes in minimal manipulation, letting each vineyard express itself, with more attention paid to textures and tannin management.

Good morning Casemates! When my case of Scott Harvey arrived so did another smaller box…Surprise Lab Rat! 2019 Marshall Davis Cab from Oregon. I really need to pay attention to my emails but it did come same day as the wine. Unfortunately due to other obligations I have not be able to open & taste until later today so stay tuned…
How much more are you saving by buying a full case?

Keep checking for lab rats on this one- the Washington State wine I received a few days ago is wonderful!! Hoping this will be the same-love Washington wines.
Sorry for the delayed lab rat report & that I couldn’t get the heading right … HELP!
Delivered in a 2 btl package with a Casemate glass(which I almost threw away…my bad.)…thank you Alice & Wine David.
On pop & pour this wine at 15.3% had no alcohol heat to smell but more subdued fruits.
After about 15-30 mins of breathing taste was smooth, black cherry mostly, light tannins not oaky for a cab and for me not a jammy cab that this area is known for either. Very smooth with a nice finish. Almost to me more like a blend. Due to schedule could not plan a meal but on it’s own nice.
We saved half the btl to taste tomorrow…for me so far on the fence on advice as it didn’t hit me as a WOW & for the cost a little high for me as a daily drinker & I am pretty much only a red wine drinker.

@dawnlac Follow up day 2 report…for us it was a “we should have drank it all last night” as we liked day 1 & disliked day 2 even with having it sit in glass for a bit. Gave 1 of us the bad wine shiver face if you know what I mean
@rjquillin Half the btl was left & we just corked it & left on the counter.
So more likely will air taken out would have been better. Tbh we usually never have wine left for day 2 but I know many like to know how it holds up.
I’m not familiar with this producer but there are a LOT of Walla Walla wine producers which have an address there because it is a premium wine destination similar to a Napa Valley address. Even then many wines come from fruit from other parts of the state, like the larger Columbia Valley AVA.
This claims to be from a single Walla Walla vineyard. if true and at all ‘good,’ it would command a much higher price, which makes me ask « why is it for sale here? ».
Another case where direct winemaker participation would really help.
Also when a producer throws in marketing words like ultra-premium and ‘prestigious’ it actually lessens my confidence that this will be all it says.
@pmarin I agree on the marketing that tries to hard to call itself “amazing” with more and more superlatives.
But there are many reasons that a wine from a more “prestigious” region won’t fetch as much as the top wines. Napa Valley has about a 100x range on the standard SRP of various wines from the region.
There are also many reasons a winery wants to sell here. You could ask the same question of just about anything being sold here, in fact. Sometimes they need a cash injection to fund, e.g., bottling. Or maybe they need the storage space for incoming vintages. Maybe they view this as a good marketing channel, although the winemaker participation makes that much more true.
As for “claims to be from a single WW vineyard…”, if that’s not true then they are in serious trouble with the TTB and would likely have the winery lose its license.
Pop and pour: Muted nose, with red cherries, and I couldn’t get anything else. Some alcohol. Tasting committee: Citrus Zest. Initial impressions: Balanced acidity, light tannins, mid to long finish with citrus/ bell pepper notes. We decanted the rest and allowed it to breathe. 30 minutes post, the wine was way better, with bouquet exhibiting dark cherries. On palate, smooth complexity, dark cherries, slight citrus and showing a chocolate finish. This wine is not fruity, and is a very classy effort. Medium to full body, would pair well with Filet Mignon, poultry, but perhaps not with fattier cuts. Very balanced and enjoyable on its own, must allow breathing time to come forth.
We thoroughly enjoyed this wine. Thanks Alice and WCC for the opportunity to taste!
