Tasting Notes
Onesta Rosé is opulent and bursting with flavors of guava and melon, delivering a mouthwatering long finish. Made in a Provençal style, the Rosé is completely dry (no residual sugar) and elegant which makes it the perfect wine for relaxing with friends on a warm spring or summer day.
Cinsault (San-Soh) is the Queen of Rosé varieties in Provence, producing elegant & sophisticated wines. The large berries in a Cinsault cluster give high juice yields with low color and phenolics. Onesta Rosé is made in a Provençal style, the Rosé is completely dry and elegant with rich texture.
Bechthold Vineyard, Lodi CA
The oldest vineyard in the Lodi region, 25 acres of Cinsault planted in 1886. This is the oldest Cinsault vineyard in the world! The old vines are head trained, organically grown, and dry-farmed. One side of the vineyard is bordered by a water canal, which the roots from the old vines have accessed over the years. The vines closest to the canal have a larger crop and are naturally lower in brix, so perfect for Rosé production.
Vinification
The Rosé is 50% saignée and 50% fruit picked specifically for Rosé. The juice is fermented in stainless steel and 5% very neutral oak barrels. The wine is aged on the lees for 8 months to enhance the rich mouthfeel of the Rosé.

Jillian found her passion for wine while studying neurobiology at UC Davis. Home brewing introduced her to the magic of fermentation, and after taking the “Introductory to Winemaking” class at UC Davis, she quickly switched her major to Viticulture and Enology. She graduated with her degree in 2001 and soon thereafter found herself as an intern at the famous Bonny Doon Winery.
Her desire to learn more about winemaking has taken her around the globe. To gain essential winemaking experience in a short time, Jillian traveled to the southern hemisphere to work an additional harvest each year. For three years she traveled south to learn how to work with different varieties and observe different winemaking styles. She did internships in McLaren Vale (South Australia), Margaret River (Western Australia), and Stellenbosch (South Africa).
Syrah quickly became her deepest passion and she returned to Bonny Doon as Associate Winemaker in 2005, focusing her talents on the Rhone varieties that the Dooner is known for. She played a major role in the transition to biodynamic winemaking at Bonny Doon. Now a truly seasoned winemaker, Jillian has started her own passion project, Onesta. Her artistic expression is manifested in her wines. Jillian’s wines speak the truth of each growing season and each vintage is a new adventure for her, riding the waves of Mother Nature. Her promise to herself and her customers is to deliver wines with personality and depth every year. Jillian’s wines are made with passion and love, just like she lives her life. Her hope is that every sip of Onesta will ignite the soul with passion and enthusiasm for living life to the fullest.

We were fortunate to have UPS show up just as we leaving for the weekend. Tossed the bottle in the ice chest and let it cool while we chilled our heels in a traffic jam. The Onesta was a welcome sight after we got the car unloaded and everything settled.
First taste was tart and acidic; very refreshing. This rosé has a very pleasant flavor without any bitter notes, a long slow finish and maybe some minerals or chalk at the very end. Tasters in our group noted fruit, pear / unripe pear, a hint of strawberry.
Dinner was veggie lasagna and the Rosé of Cinsault had enough acidity and body to cut though and make itself known. This is a great hot weather wine and worth picking up.
Did you know that Cinsault is is known as the ‘king’ variety used in Provence Rose wines?
Personally, I refer to Cinsault as the Queen.
Cinsault grape clusters are huge! An old fun song plays in my head, “I like big CLUSTERS and I cannot lie, you other WINE LOVERS can’t deny”
The large juice berries is what makes Cinsault perfect for Rose winemaking. We get all the flavor, and very little tannin or color.
I’m hoping the good people at Onesta saved up enough Cinsault to put up a red offering in these parts in the coming months. Love that stuff and the inventory is dwindling !

Appearance - very light pale pink rose, lovely and elegant looking.
Nose - faint floral and sweet like honeysuckle from a distance. Light and ephemeral on the nose.
Mouth - very smooth for a rose. Well constructed; completely laking the tannic bite of so many rosés. No sharp edges, very plesant and drinkable.
Taste - citrus zest, grapefruit, and a slight yeasty character. Mild sourness and the grapefruit bitterness sustains throughout, but is gentle. Very well integrated.
Not typically my style, however this was a very refreshing and pleasant change from what i typically associate rosés with. Drinks like a very high quality wine, engineered carefully by a skilled craftsman. Strongly considering a case as i write this a few days before the release. Salut!
I seem to buy every time I see an offering from Onesta. This is probably the third rosé of Cinsault, and like others, looking forward to more of the Cinsault when it is offered. We still have plenty of summer left for Rosé every day!
Should be an easy buy for all - this variety is ideal for Rose and Jillian knows exactly how to get the most out of it! Great price as well for sure! Cheers!

Every case of this we’ve ordered has been fantastic. It’s our favorite rosé, hands down. I was happy to see it back!
