Pale yellow-colored Cava with fine and persistent bubbles. Intense aroma with fruity and floral hints and gentle notes of aging. On the palate, the wine is fresh, slightly sweet, and a very round palate.
Oriol Rossell Cava Brut is produced from estate-owned vineyards situated 150 meters above sea level. The soils here are predominantly poor, chalky clay-loam with some sandy-loam. Organic viticulture, hand harvesting, and manually selected there are no cutting corners at Oriol Rossell they primary focus is to produce quality Estate wines and some of the best sparkling in all of Spain. The wine is manually turned on riddling racks and spends 3 months aging on the lees and another 20 months in bottle before release.

My roommates and I opened this up after keeping it in the fridge and then letting it warm up just a bit on the counter.
First off: there’s a lot of fizz here. Bubbles are a bit rough and not finely entrained.
It has a lot of apparent sweetness on the nose, with stonefruit, quince, and some sort of almond-y baked goods (maybe biscotti?) all getting referenced.
But that sweetness immediately goes away on first sip. It tastes quite dry, with a long remarkably tart middle. One could describe it as citrusy but I suspect that would be a reach. There’s a slightly bitter note on the finish.
Pairing notes:
Nutella on sourdough was the hands down favorite of the things we tried with this, followed by Reese’s peanut butter cups, very dark high end chocolate chips, and ripe melon.

I really really liked this wine! Generally, Cava needs to be bone dry for me but for some reason - time, place, mood, food, whatever - it really hit all the rights spots, even being “not bone dry”.
My tasting partner said, “Ginger Gold Apple” straight away, which was very specific for him, someone who usually just nods and says “mmmm” or “Yep, pretty drinkable” when asked his opinion on sparkling wine. I agree, there’s a pronounced apple note, followed by a hint of strawberry and certainly an almond-ish /yeastiness/baked bread/light toast note. There is a tease of sweetness, but then it’s there and then it’s gone… kinda like a wink you think you saw but then you’re not sure… Either way - dry or hint of sweet - it paired really well with the first few bites of a very spicy pork taco, and then later with a bite of coconut cookie.
There was a very active and fine bead and, while we both had non-flutes, the bubbles continued to bubble and were active throughout the tasting. It has cava-esque acidity and is certainly more food-friendly than many champagnes I’ve tried, and waay more food-friendly than many of the CA “wine-ey” sparklers I’ve tasted. Having a party? Buy a case of this. In fact, I was wondering what the case price would be - and now I see it - that’s pretty fair and well-priced. I’d say load up for the holidays.

Unfortunately, UPS quit dropping packages without a signature in my area. My last 2 orders, I paid $4.99 apiece to have them held at pickup locations.
I expected to do the same with this order, after missing the first 2 delivery attempts. They were supposed to deliver Saturday for a second attempt and I stayed home all day waiting but they “rescheduled” it for Monday after it was on the truck for delivery Saturday when the driver apparently ended his shift early.
Anyway, when I go to change delivery… it’s now $14.99! AYFKM?
Sorry, no. This one is coming back, WD. Apologies but these surcharges have just become too high. I will be re-dropping my membership as well but will remain active and still chip in on cases that other people buy when appropriate.
