Tasting Notes
This wine packs an opaque, inky, dark purple hue. Aromas of dark berry cobbler on the nose are revealed on the elegant palate brimming with black currants and tapenade and lead to a long finish with well-integrated tannins.
Winemaking Notes
The lionâs share of Malbec for Ms Behave 2020 was the result of a single fermentation of Old Schoolhouse Malbec that took place in a concrete tank. Smaller portions of fruit came from the dry-farmed hills at Mustang Springs Ranch. When it came time to press all these Malbec lots, the initial free-run juices from the concrete fermentation were drained into a concrete pyramid where they aged until blending. Most of the Malbec outside of the concrete pyramid lived in new and used French puncheons and barrels. Several neutral American oak barrels were used as well to help give this Malbec the thick and weighty mouthfeel that the finished product shows. Once blended in July of 2021, this wine was barreled down into 40% new, 60% used French and Hungarian oak barrels to marry until bottling in July of 2022.

Crafted from an organically farmed vineyard, Bailey is a showstopper. The nose is bursting with aromas of olallieberries, roses, and blueberry pie. The palate is redolent of mixed dark fruit cobbler brimming with baking spices and candied cherries leading to a long silky finish.
Winemaking Notes
2020 Bailey Zinfandel was delivered over two days in mid-September. We opted to ferment a large portion of the Zinfandel in a stainless tank in 2020 â where it received 2 gentle pump-overs per day. Unfortunately, an otherworldly presence manifests every harvest to ensure that an intern will do something wrong to the tank we used, despite it being nearly next to the laboratory. In 2020 a FLORIDA MAN removed the wrong clamp, thus de-valving the tank. But before too many precious grapes could spill onto the floor, an alert staff member capped the valve stem. This unintentional, beer-fine-inducing saignee resulted in a beautifully concentrated vintage of Bailey Zinfandel. While the tank was fermented by a commercial strain of yeast, a smaller lot of the same fruit was fermented natively in a bin. Both portions were pressed on the same day â the resulting free run juices were aged separately from the combined press fraction. All portions of Bailey Zinfandel were aged in 30% new French oak barrels and a single puncheon; the remaining 70% spent about 8 months in neutral French barriques. The components were blended in June of 2021 and returned to once and twice used French and Hungarian barriques to marry until it was bottled in March of 2022.

Our 2020 DeVine Cabernet Sauvignon has enticing aromas of berry brambles, leather, and black cherries, which lead to flavors of sweet red and dark fruits and a long, silky finish.
Winemaking Notes
If the 2020 Devine tastes different â more varietally correct, perhaps â than in the past it is because we changed our vineyard sources for the Devine blend. While we used to source Cabernet Sauvignon from a small vineyard in the Templeton Gap District, we sought out dry-farmed sites in Adelaida for the 2020 vintage. The cabernet from Dodd Vineyard, Old Bailey Vineyard, and the new plantings at our Estate Snow Vineyard have made Devine richer, darker, and more typical of Paso Robles Cabernet. The fruit from these three different vineyards was received, sorted, and fermented separately. Once pressed, these wines were allowed to age in a combination of new and neutral French oak barriques, and neutral American oak barriques. To round out the final blend, and stand-out barrel of Syrah from Mustang Springs Ranch, and a small portion of Malbec from the Old Schoolhouse Vineyard were added to provide some depth. The blended wine was returned to barrels where it was allowed to continue aging until bottling in July of 2022.

Cheers and thank you to those at Casemates and Peachy Canyon Winery for this pleasant last minute surprise to be a Lab Rat. I had to make it short this week and I tried not to dissapoint you all. So I paired this Zin with what I thought would best compliment each other based on the wine specs, some homemade smoked jalapeno bacon cheeseburgers. Damn, it was good! We liked the wine, but I liked it much more.
The color was somewhat of a lighter maroon color that you can tell just by looking at the bottle with some light behind it. Upon opening, it smelled light and delicate that revealed a faint cherry scent. I took a sip and it was so round it glided across the palate giving it an airy mouthfeel then leading with subtle red fruit, following with my favorite flavor profile of cherry Jolly Ranchers. It ended dry and smooth with a medium-long finish and a white pepper kick. An hour after opening, the flavors matured to slightly jammier dark fruits with some tart cherry and spice that gave this Zin a more full profile yet still keeping that smooth elegant peppery finish. There was just enough acid to hold up to the rendered wagyu beef tallow that was added to the hamburger mix. What a great bottle and must add that I didnât even notice the 15.5% alcohol or any heat. I corked up a third of the bottle for day 2 experiments.
On the second day for lunch, it didnât hold up as well as I was hoping for but it did not discourage me from finishing the bottle. Based on how it held up the second day, it has me thinking that it would be better to start drinking this sooner rather than later. This is a nice end of the week bottle that Iâd normally drink up after those long rough shifts. I would be very much interested in holding 4-6 of these bottles in my stash if the wifey approves with the costs but seeing that this is a variety pack, letâs see if I can get the case at this steal of a price! I am always to happy to report for labrat duty, but this time the wine and the email showed up on a week where I was out of town for work. So my beautiful wife stepped up to the task and had a tasting with some of our friends. She even sent a picture:
This wine was wonderful! I shared with friends right out of the bottle (no decanting). We all immediately agreed it had a great nose and was very pleasant and easy drinkingâŠthere were smiles all around! My first taste was intriguing â tannins present but not overpowering and very smooth mouth feel. Each sip better than the last â notes of dark fruit, reminding me of jam or pie. I found the wine to have a long finish (one of my favorite attributes of a good wine) and I found it enjoyable just on itâs own. However, we all agreed it would be quite versatile and pair well with cheese, steak, or pasta. This wine is extremely expressive and according to the bottle itâs just in itâs infancy of âsweet spotâ for drinking (2020 that says to enjoy over the next 3-10 years). My opinion: buy a few bottles to enjoy now and also a few to save for special occasions laterâŠyou canât go wrong with this gem from Paso Robles!

Wow! I admit that when I received this bottle from Alice, I wasnât too enthusiastic.
While I prefer red wines with pronounced tanins (aka âhardâ) the malbecs, which I have had in recent years (Cameron Hughes 2010 Mendoza Lot 258 - 2010, Rancho Campo, and Undaunted Columbia Valley 2015 Malbec) have not earned a place in my heart as being either exceptional or must buys. I did look over my cellar to see if I had any remaining bottle with which to do a comparative taste test. Alas, but no joy.
My first impressions of this Peachy Canyon Ms Behave Malbec were: smooth, lots of fruit (strawberry, raspberry), and vaguely reminiscent of the first time I had a glass of Opus One.
To be sure this is not an Opus One look alike, but it indeed reminded me of that first experience with the velvety mouthfeel and subdued rather than pronounced alcohol
Owing to my schedule, I did not do my evaluation with a full meal, but rather with a quick charcuterie plate (American Granada, aged imported French raclette, sopressata, salami, and a heel of a pepperoni stick along with a long in the tooth baguette.) This Ms Behave malbec held its own against a plate of strong flavors and provided a wonderful refreshing balance. In other words, it paired well.
I love the striking, deep color (Oh the color!) and the delightful berry nose. I would love to serve this to guests with dinner, but frankly would probably resent, just a little bit, that whatever supply I had on hand was not going to last.
I am not surprised at the price point of the offering here on Casemates, but I am disappointed that I cannot get a case of just the Malbec. Now that is a sentence, I never thought I would write.
The other Lab Rat reports in this mixed case offering are as favorable, so it looks like I am in for a case.
