Pale, transparent pinkish brick color and fragrant aroma suggesting tropical fruit and (a scent familiar to many a wine lover) Strawberry Jolly Ranchers, plus a smidgen of dusty, almost menthol-like eucalyptus. The freshness in the nose follows up in an off-dry palate feel that is light and zippy with fresh-fruit acidity. Medium sweet (dulce). Round and fresh on the palate.
Pressed gently and stainless steel fermented
An ideal wine for pizza (I’d go with anchovy, bell pepper, mushrooms, and olives) as well as any spicy street taco (from seafood to carne asada and spicy Al Pastor).

We were delighted to receive this bottle of Seis Soles to labrat. My co-taster, Mrs. Z, and I are both big rose fans, but typically not this time of year. We like a nice bone-dry French style wine for a warm summer’s evening. But duty calls and as it turns out, this one went surprisingly well with a couple of hearty winter dinners.
For science, we decided to taste this side-by-side with a bottle of 2019 Gard Vintners Rose Grand Klasse reserve, which is probably our favorite Casemates rose purchase heretofore. We figured a few of you might already have some of this in your cellars and the comparison might be worthwhile. The two wines couldn’t be more different, so I think it was a useful exercise.
We drank the wine straight out of the fridge, per the bottle’s suggestion, and I think that suggestion was well-taken based on the flavor profile. Unscrewed and poured into a casemates glass, and both of us immediately noticed a lot of fruit on the nose. I got strawberry and honeysuckle, Mrs. Z said peach. I didn’t agree with her until I took a few sips, and then I came around to her perspective, and felt that the peach got more and more noticeable with each successive gulp.
The wine is definitely NOT bone dry, but neither is it mega-sweet or overpoweringly fruity. The fruit was very noticeable from start to finish, but never obnoxiously so. Mrs Z said: “it’s just a little bit of a whisper of a thing.” She also thought it was somewhat minerally and noticed some graphite going on. I didn’t get that at all, and I disagreed with her about the minerality, but she’s generally wiser than I am, so maybe trust her. YMMV. One thing we both agreed on was a really interesting fruity note on the back of the palate that neither of us could quite place. Mrs. Z says “guava or something tropical and slightly funky.”
What was really eye-opening was tasting the Gard after each putting down half a glass of the Seis Soles. The Gard tastes super minerally by comparison. Side by side, the Gard really reads as bone dry (which I’m not sure is what I’d call it if I were tasting it solo, y’know?). And then going back to the Seis Soles, we both REALLY noticed the peach and some other subtle fruitiness that Mrs. Z called “apple blossom.” (Is that even a thing?)
The most interesting thing about the Seis Soles, however, was how unexpectedly well it paired with our dinner, which was spicy Indian lentils. (Dal Tadka, as loosely interpreted by a pale midwesterner with whatever spices were on hand.). Never in a million years would I think to open a bottle of rose on a frigid winter’s night with this meal. To my shock, the wine didn’t get lost at all, even with chili crisp blowing through our mouths. The fruit moves noticeably to the front of the palate rather than the back, but it’s there in all sorts of interesting (and dare I say subtle) ways. Not bad for a totally non-subtle meal. (The Gard also held up OK with the food, but did more what I expected it to do — namely, it just tasted dry and French and perfectly good in a one-note way. The Gard was like a steady bass line, while the Seis Soles felt more like a bright guitar accompaniment to the meal’s vocals.)
By virtue of the side-by-side tasting, we had enough Seis Soles left to re-screw the cap and save some for day 2. This time around, it was much less fruity. I got much more honey notes on the second go-round, while Mrs. Z still says she thinks it’s minerally. To me it tasted like it coats the tongue quite a bit more, which is probably why my mind went to “honey.” It was still cold winter weather, so this night’s unlikely pairing was soup made from Cholent (a classic Jewish dish featuring short ribs, bone marrow, and barley — in other words, RICH brown food). I would never thing to drink pink wine with this dish… really it calls for a bottle of dark beer. But, once again, the wine really held up. We were surprised and impressed.
Bottom line - this wine is a clever little thing, neither a fruit bomb nor a classic old world dry drinker. Is it a summer sipper like I normally want rose to be? I dunno. It ain’t summer. But it’s a fine accompaniment to rich and spicy food in the winter, in circumstances where I would normally think something sweeter would be a better choice. So I told my husband that January would be a dry month for me, but it’s clear the universe had different plans when this bottle arrived on my doorstep. Since I am a dutiful little rat, this bottle went straight into the fridge and awaited my return from yoga class later that evening.
The first thing that struck me was that this rose isn’t that ‘millennial pink’ color I’ve seen in a lot of rose. It’s more of a salmon color. The bottle is also cool AF, and it made me want to read more about this wine AND the winery.
I want to preface this by saying, I’m not a fan of rose. My past experience with it is that it’s a too-fruity-brunch-rose-all-day type wine, which just isn’t my thing. When I read that this was a provencal rose, I had to do a little bit of education to find out that this shouldn’t be as sweet as I’ve experienced in the past. Cool. Ok. I also saw that this wine would be great with just about any food, so I opted to see how it works with tacos.
I poured a glass, snapped a picture, and took a sniff. I got peaches and nectar, maybe even a little grass and/or hay? It definitely made me think of summertime and warmer weather. (Luckily, I live in Florida so ‘seasonality’ isn’t necessarily a thing) Took a sip and seriously. Guys. This wine is DELICIOUS. Smooth, not-sweet fruit up front, that fell into minerals, and ended with a pleasant tartness that reminded me of overly ripe guava/passion fruit. Each of the three flavors I got from this wine was present in every sip. I felt like this wine is very sure of itself and is just up front with who it is. It’s dry and sweet at the same time, in a wonderful way. It felt really full in my mouth, without being thick, if that makes sense. Just pleasant fruit, mineral, tart. Pleasant fruit, mineral, tart. Even as it sat out and started to warm, it was consistent and even in it’s cadence of pleasant fruit, mineral, tart.
It also paired very VERY well with my tacos (carne asada + fried jalapenos + pickled onions + other stuff) which is not something I feel a lot of the wines I enjoy can do.
This is an incredibly drinkable wine. It’s refreshing, light, and fun, and when I was done with the single glass I allowed myself (dry Jan!!), I really wanted more.
I’ve mentioned in my past reviews that while I enjoy wine, I’ve got no idea what I’m doing as far as ‘professional tasting’. However, I know what I like, and I like this A LOT. This is absolutely an instant buy for me!
