Tasting Notes
From winemaker Ty Caton, the 2017 Winemaker’s Cuveé Cabernet Sauvignon meets the palate with rich and full-bodied flavors of black currant, red plums, and cassis, followed by oak notes of cedar and vanilla. These dark flavors produce a lush and velvety textured mouth feel that combine with supple tannins and leads to a long silky finish.

Located in the foothills of Sonoma Valley, the Caton Vineyard is defined by its sustainable farming and belief that healthier vineyards produce unique and distinctive wines. The vineyards have multiple sun exposures, soil types, and vary in altitude over 300 feet between each other. Mobile lab rat checking in! We received (and drank) this wine on national wine day! Wow! This deep red, very dry, wine was labeled “Best she’s ever had”! There was no weird aftertaste, which happens after some dry reds. It packs a punch at about 15.5% so one glass was enough for the night. Definitely worth $22.50 a bottle, I’d even pay $6.60 or $8.80 for a wine of this caliber … wait wrong decade (anyone get this reference?) I’d say it’s worth the cost, so get out there, find some friends to chip in, and get the case. You won’t regret it, I know I won’t.

The only way to get a better deal than this is to drive by the TC office, see the man himself standing outside, stop to say “hello” and he then hands you a few bottles. Per usual, they were outstanding and thrilled to see them offered up here. Way to wind up an epic CM week.

We still have some Ty cabs from the old days, and we super excited to see what the 2017 “winemaker’s cuvee” had in store.
On initial pop n pour, showed some very fruity aromas - raspberry and black cherry, but not too much else. I was really worried that this was going to be full fruit bomb, which is not my preference.
It was a lovely dark red-purple color, but apparently I failed to take photos in the glass.
After 10 mins in the glass, it really opened up. Fairly full body with good tannin balance. Still fruity on the nose, but not quite as fruit-forward as initially. Interestingly, I didn’t perceive any oakiness or ceder/cigar box or too much vanilla, given the duration of aging (19 months) in 60% new french oak barrels. I definitely got current and black cherry and some other darker fruits. Nice balance between old and new world styles. No perceptible alcohol/heat. After some additional contemplation, the finish was more caramel and toffee… so maybe that’s where the barrel aging comes in. Tannins definitely around and still integrating. Wine has decent acidity, but no so much that this needs food to be fully appreciated.
Overall, I’d say it could stand a few more years in the cellar to be more to my preferences, but this is clearly a solidly made wine with some additional potential!
From michelleshari: Pop and pour sweet and berry. Long lasting legs. After about 15 minutes. Full bodied. Yummy. Berries mellowed out a bit. Except not good with grapefruit or gefilte fish. Goes well with chicken. Probably would be better with red meat though.8 year old said its strong and yummy. And she drank all that we gave her. Still good an hour later. Do recommend. 11 year old said its good and she wanted to drink more. She agrees it’s strong. And delicious.
We’re in for a case, and looking forward to seeing how this continues to evolve over the next 5-10 years.
Damn you casemates-- I really don’t need a quarter-kilobuck of wine, but can’t pass up this TC. Been buying this since we were kids in college, 4 of us splitting cases from wine.woot in ~2006!
