Straw color with greenish hues, aromas of green apples, and golden delicious, demi-sec like taste soft and long-lasting finish. Fragrant, light, and floral. These are the adjectives that best describe Prosecco.
Thanks to its authentic nature, this is a wine that has been able to reinvent itself from a regional table wine to a status symbol for toasting and celebrations, in Italy and beyond. It is consistently the best-selling Italian wine in the world and in 2014, sales of Prosecco surpassed even that of the famed “bubbly”, Champagne. A recent success that conceals a much more complex and fascinating history.
Commitment, research, respect, and continuous evolution are the benchmark values both in the vineyards and at Valdo Winery’s two production sites. The winery has always sought to enhance Valdobbiadene Prosecco Superiore DOCG’s wine-making heritage and land, to the best of its ability.
Excellent as an aperitif, ideal with salumi and smoked fish.
The Valdo wineries were established at the heart of Conegliano Valdobbiadene, a unique land and Unesco World Heritage, just half an hour from the magnificent city of Venice. The love story between Valdo and this land rewarded by nature and at the heart of the Valdobbiadene Prosecco Superiore DOCG production is continually evolving. Year after year, Valdo has written new pages, describing how passion, together with tradition and innovation, can lead to the creation of unique Sparkling wines.
Valdo is a name that instantly brings to mind the land it belongs to, Valdobbiadene. A name inextricably linked to the Bolla family, which has been in the wine-making industry for more than 90 years. Considered one of the oldest in the area, over the course of three generations it has been able to spread the culture of Prosecco in Italy and throughout the world.
Valdo Sparkling wines’ excellence stems from one of Valdo’s key advantages and important factors, the control of the entire production process. From growing to harvesting, from the sparkling process to the bottling and packaging stage, Valdo is constantly committed to ensuring it monitors the entire production chain with the end purpose of producing top quality sparkling wines.

I think this was offered here in November a couple of bucks more expensive. The rat bottle has extra dry on the label, although the pic on the offer did not, same pic as here today…
I LOVE a sparkler, and a prosecco is perfect for a low key celebration! In my case, I had some friends and family over for my first dinner in my new house.
It has a lovely straw color and nice bubbles, notes of apple and peach on the nose and in the palate.
When trying it before eating, we all agreed that this was slightly on the sweet side. All palates enjoyed it, from the “moscato only” auntie to the bone dry sauvigon blanc afficionado. That being sad, my bottle said extra dry, but I would have given it off dry.
I made a lemon butter scallopini with capers, spinach, arugula, and mini peppers. It was great with food, and we had no trouble polishing off the bottle between us.
I think this is a really accessible sparkling wine, and it’s a good one to have around to throw in the fridge or bring to a brunch or dinner party.
Light straw color, not much on the nose. Green apple. Light yeast. Clean. I actually found it to be plenty dry - would not describe as off dry, might even have considered brut. I’d say average dryness for a Prosecco. Lovely acidity and freshness. Bubbles are small and very lively. Balanced.
Lamarca is a go-to Prosecco for many and I had a split in the fridge, so tried side by side. Lamarca bubbles much coarser, taste is rounder, fruitier. This offering is much better.
We thought about mimosas on day 2 of the bottle but decided this is too tasty for that. Very solid offering.
Ok, I really need to stop ordering wine, but Prosecco just feeds into my fantasy that backyard bbq’s and getting together for dinner are just around the corner. Anyone in Queens, NY interested in a split? I’m going to order a case, but not sure I can fit any more wine into storage. Rescue me!
@Jackinga@LSeewoester I would be really mad if I had to do that on a methode champenoise wine. That said, just tell casemates - they will make it right.
@aces219@LSeewoester It was only one bottle AFAIK, and of all the many cases of sparkle ordered over the years, it was the only one to have gone flat. (So far.)
It was not worth the effort to make noise, and only the work of a couple of minutes to make it sizzle with the old gas fizzle again.
Irregardless, it is history now, and wasn’t bad when I gassed it up and brought it back to life.

@erisire
perhaps the off-dry perception is from fruit and not RS?
@rjquillin It’s possible, I’d be interested to see the brix.
@erisire Is this controlled somewhat by dosage or it’s equivalent at secondary fermentation, or brix and when fermentation is halted; idk.
@rjquillin I’d be curious for a winemaker response.
@erisire @rjquillin Might be waiting a while for a winemaker
I was excited to try this as I do enjoy Prosecco and we had some lovely stuff when we went to Venice.

@aces219 Helpful comparison, thanks.
Gah, I really like the by the case price but have sparkling wine coming out of my ears thanks to Gruet.
@aces219 Oooh! I would really like to see that…

fwiw in the world of Prosecco, Extra Dry which is what this bottling is, is legally 12-17 g/l of residual sugar.
@kaolis thanks…so that’s equivalent to Iron Horse Russian Cuvée
@aces219 @kaolis
They are calling it Russian River Cuvée now.
@chipgreen legit
A bit hesitant to buy sparklers here anymore after the last purchase (Opta) all came entirely flat.
@LSeewoester I had one bottle of Opta come out flat. So I simply recarbonated it.
I have a SodaStream retrofitted to a 5lb CO2 tank, with which I carbonate a variety of still wines to make them sparkle.
@Jackinga @LSeewoester I would be really mad if I had to do that on a methode champenoise wine. That said, just tell casemates - they will make it right.

@aces219 @Jackinga @LSeewoester fo’ shizzle!
@aces219 @LSeewoester A wee bit of CO2 makes the ugly into stably, doubly lovely bubbly.
Hierarchal, matriarchal, patriarchal, sparkle gargle!
