@kaolis@rjquillin
Apologies for the delay. Apparently, when I got home I remembered that I had a piece of cheesecake waiting in my fridge and, needless to say, I got a bit distracted.
Nose is definitely bright red fruits. Think strawberry/raspberry, cranberry, cherry. There’s something floral hiding in there as well as an earthy note I can only settle on calling “sticks” (not a bad thing). Palate is clean and crisp, backed by enough flavor and acid that my overall impression is “juicy”. It does have some rounded tannins, but definitely in the background.
I paired it with chicken parm in a tomato cream sauce, side of pasta (same sauce) and a small salad (gotta get the green stuff in!). It paired nicely. The tartness/acid handled the creamy sauce pretty well.
I know there was some discussion on the offer thread about longevity. I think this is lovely right now with a short decant. I do think it has plenty of life and aging potential. No rush on these. Will it hold as long as Rachel claims? Time will tell. I like it. I’m glad I caved and got the case.
Scott might be on second dinner by now, but we’re just getting things sorted. Got some pork chops I’ll pan fry and decided to pop a 2018 Calera Muns Vineyard Pinot, Santa Cruz Mtns.
@ScottW58 That’s a pork belly? Shoulder? Either way looks great. I just wait for the TJ’s version to show up every year. I’m sure it’s nowhere near as tasty as a proper Italian one, though.
@FritzCat I was going to open one of those the other night, the only one I have left of the '09. Decided to hold off. Had a nice '13 Estate Syrah instead, no complaints.
Tonight is night 2 of the 2000 Marqués de Riscal Rioja Gran Reserva. Cork was soft, but presented no problem for the Ah-so. Initial nose was acidic and a bit off-putting, but a few minutes in the glass and a few swirls later the nose was muted with some dark fruits and tobacco. Not much else I can identify. I supplied wine to my son’s wedding last month; two Casemates offers, Daou Rose and Keen Chardonnay. Both of those were very nice. @winedavid59 said the Keenan was the best Chardonnay he has offered us, I can’t argue that. @jmdavidson1@ScottW58 maybe the whole West coast. They come from Oregon and Washington I think.
I’ve gone through 4 boxes already and have 5 or 6 more waiting. My favourite time of year to go to Costco.
@jmdavidson1@kaolis@klezman
It is really quite good! Really nice balance, I think these need time. The last one I opened a few years ago was not nearly as good.
@chefjess@kaolis@ScottW58 much better than the lineup for the wine night I was at yesterday. The most interesting wine somebody else brought was a Carucci from Santa Ynez and a Poggio Valetto white blend.
@kaolis I’d give it more time. Fruit still dominates but it’s not flabby. I think it has enough acid to work well with food when the fruit calms down a bit more.
Day 2, poured 2 glasses. Good wine, good acid and some tannins. Very serviceable.
SWMBO didn’t like it, had to pour hers out and substitute a “better” wine.
So…
Clearly not what the second Jan 8 offer was that got fowled up. I think all that ordered ended up receiving both bottlings. Don’t recall if Fetzer delivered an incorrect product, or if it was a fulfillment error; I think the former.
Smoked a brisket today, damn brilliant if I don’t say so myself and store bought puff pastry stuffed with carmilized onions and gruyere. And I took a chance on a couple bottles of 1994 Stone Street legacy cab on winebid for $30 per. A rec from a friend good call this first bottle was beautiful! A good night
@ScottW58 yumster… I’ve yet to do a brisket right, too small of pieces I think or maybe it’s my small Smokin-It…but everything else turns out fine in it
@chipgreen I’m always amazed at some of the wines you drink that i purchased years ago and are long gone from my inventory. I do recall this wine being rather tasty.
@chipgreen@jmdavidson1@ScottW58 Yeah some of y’all are way better than I am on hanging on to wines. But then again I don’t have 10,000 bottles to choose from…ha!
Had to look your onion up, never met an onion I didn’t like, have to give that a go
@kaolis Such as it does in West LA, I suppose
But if you tell me “choose some reds and whites under $200 from this wine list” that is a mission I will happily accept!
2020 Sleight of Hand Syrah Psychedelic Stoney Vine Vineyard
with ribs, smashed truffle taters and g-beans;
error with my hasty selection, entirely too young
@chipgreen I really liked it, SWMBO less so. I think the 2014 is in a good place with nice balance. I’m happy we got it. FWIW, both of us are mostly, but not quite, over colds.
@kaolis@ScottW58
I almost made a Sesame Street comment. Then I almost made a Flying Spaghetti Monster comment. Then I thought of kylemittskus(sp?). Then I got distracted and moved on…
With a long arm into the cellar
2008 Lang Wines Barbera Oakmont
OK, a woot just 12 years ago actually;
poached salmon and halibut and pasta with red tomato things, 'shrooms and capers
@kawichris650
I debated between the 06 and 08 and ended up with this; purchased two each. Seems fine, but my first so I really don’t have a comparison. I drank one of 06 long ago, cork closure, this, a twisty. Can’t say it was fresh, but it sure wasn’t at all tired either; drank well actually.
Staying on the rib steak roll, my menu started out with those danged Chanterelles from Costco people here kept writing about. I spotted them at a Costco on Long Island the other day and my FOMO got the best of me. But they turned out to be the least fave part of the meal. Polenta from Bob’s Red Mill, roasted Brussels sprouts, and grass-fed steaks from what I hope were happy cows from Berkshire Co. in Western Mass. With a very likeable Douro blend. Just being out of the city for a few days makes everything more delicious.
@kaolis nice! You know I’m a person who likes a steak tartare with a quail egg once in a while but damn man if you need a torche to warm up the middle of that steak I will happily send you one
Last night was a parent thing at the kids’ school so it was either crappy kosher wine or several liquor options. So I had a decent anejo tequila, Glenlivet 14, and a random central European brandy that was quite tasty that I should have taken a picture of.
@kaolis@ScottW58
The Siduri was in great shape. Well balanced and food friendly but also great on its own. Earthy and savory but with plenty of fruit left. Cherry and sage with a hint of eucalyptus. Medium, silky tannins and medium+ finish.
Just ordered some tacos and popped a bedrock, very nice. And had to try this PX fortunately it came with a little vile to try before you open the bottle. Unbelievably delicious!
Not that I’ve bought that much but just when I say I’m done with De Negoce I get suck into a few lots of pinot…tossed a little belly and wings in the smoker
@kaolis I suspect DN is doing quite well with the wine glut of late. Too bad he’s likely taking away lots from what could be amazing wines under the CM label.
@davirom@kaolis I did not know that. So he built it quickly and then sold it to focus on the beef venture? I thought Cameron was the main negociant so I wonder how things have gone since he left.
@davirom@kaolis@klezman since 2017 Likely a non-compete on wine had him go to beef until it expired and De Negoce was founded.
And, from Wiki
In July 2024, Vintage Wine Estates filed for Chapter 11 bankruptcy protection, with plans to sell all of its assets, including Cameron Hughes Wine
kaolis talks about his infrequent DN (De Negoce) buys, excepting PN klez mentions DN could be bottling for CM, (and it begins to derail) davirom questions CM labels (thinking CH/CM?) klez reminds WD has had juice bottled for meh (by what entity?) Did the old CH or the new DN bottle for meh, as many did for WW and we hope, someday, someone will for CM? kaolis reminds of the CH sale, klez and I pile on with additional worthless information, and it’s totally off the rails now. ScottW tries to right the wreck (how was the wine? I have a moment of (clarity?) thinking I now understand…?
@davirom@kaolis@rjquillin@ScottW58 You rea incorrectly, Ron!
I was saying that I suspected De Negoce was buying up all the wine that WD could otherwise nab for Casemates/meh labelled wine.
But I didn’t know he sold De Negoce. I was guessing that he did it to focus on the beef thing.
None of this had anything to do with CH Wine from what is now ages ago
@CorTot@davirom@klezman@rjquillin@ScottW58 Confusing?..nahhh…Cameron Hughes started Cameron Hughes Wine. Cameron Hughes has had nothing to do with Cameron Hughes Wine for years. Cameron Hughes starts de Négoce. Cameron Hughes no longer has anything to do with de Négoce. Ignore the rest of the noise…ha!
Lot 506. Quite good. Youngster, duh. Rochioli was a guess as being the source, but doesn’t taste like Rochioli to me. Leans more to the elegant side of the grape and more lift. It’ll be a bit before I pop another but I bought a full case so won’t wait forever.
@FritzCat guy waits forever, has his piano tuned by the famous tuner, Opporknockity. After a bit guy fiddles with the piano putting it out of tune. Calls the tuner back requesting a return visit but is rebuffed. Because… wait for it…
Jumping on the Wellington Wednesday train, with meatloaf and I had to do the fondant potatoes again. So good and the wine is doing great for a 17 year old!
@InFrom
Lol! There is a blurb on the back label about how the winemaker experimented with making Zinfandel as a teenager and his Grandfather referred to those efforts as “Zinfandoodle”.
@InFrom Naw, haven’t touched any of them, as mine all went directly to an off-site locker. Your post made me wonder if I had any, as it sounded familiar.
@kaolis It was – little fried pillows of potato matter, what’s not to like! The NYT has been awash lately in variations of crispy gnocchi – sheet-pan, pan-fried, you name it. Mine were not so crispy anymore, once I cooked them with the tomatoes in a covered pan. No matter, it was delish.
I did a mashup of various recipes, based on what we had on hand here. There was this weird, wet stuff coming down from the sky yesterday, they say it’s called rain. They say it has happened before here, but I’m not sure, it doesn’t ring a bell. I thought it prudent to stay indoors and not risk a trip to the store for extra ingredients.
@ScottW58 Delicious. She used to be an assistant winemaker at Kutch and he is/was same at Rhys. Will probably go the distance but hey. Just ordered a few of the '22
I bought some ox tails to make my favorite stock for french onion soup and had some leftovers, threw them in the pressure cooker with potatoes carrots, garlic, carrots and spices. Buzzed the potatoes and half the carrots in the juice to make the gravy. Damn this is good with two new arrivals. I’m happy!
@kaolis@klezman
The Toscana was okay, tasted correct but maybe a little boring. To be fair I popped that bottle the second it fell off the truck so maybe that had something to do with it? Don’t think I will be running out to find more.
@kaolis@ScottW58 I had some of their 2012 Il Toro blend that was pretty solid as a mystery wine. Have some of their 2015 Brunello that I haven’t tried yet.
@kaolis@klezman
Likely the brunello will be great, this was probably the low end bottling with grapes that did not make the cut? Now I get to put on my “I’m stupid” hat for a week to remind myself that the last thing I need are daily drinkers
@kaolis@klezman@ScottW58 I know my cellar is a tiny fraction of the size of others on this forum, but nevertheless I buy and drink the cheap(er) stuff and put off drinking the “good stuff”. And ask myself “why?”. Any night could be Drink That Bottle Night.
@davirom@kaolis@ScottW58 We do a lot more of that. “Daily drinkers” are running low, but the catch is opening a $50 bottle for somebody who’d just as likely drink Two Buck Chuck. (Yes, there’s plenty that’s cheaper, but you get the idea.)
@davirom@kaolis@klezman
Yeah with so many good or great wines in my cellar or supposedly imho great wines I am of the opinion now just about every time I drink it should be “drink that bottle night”. But occasionally I get weak and buy them even tho I don’t need them but hey a couple few of times a year I will forget and argue a point with my wife that right or wrong will only get me in trouble! So shoot me I’m human
@kaolis@klezman@ScottW58 So after that mini-rant I went over to the new UC and picked up 6 bottles of champagne. One was upgraded to the
2006 Louis Roederer Cristal Brut Champagne, msrp $400.
@davirom@kaolis@ScottW58 score!
Are they sending out emails with the new offers? I thought the one for the weekend was sold out.
And if you “need” help with that upgrade just let us know
@klezman
Yeah I like to give the chili just a few hours of smoke cover it and cook on low for for about 4 hours more. The leftover brisket chunks just melt in your mouth
The tannin is still a bit sticky but really delicious!
Finally got around to making the first pan pizza of the season, and it came out great. Better than last year’s. With green stuff that was white (roasted cauliflower).
The Wellington is excellent, though the cork was in bad shape. Needed to deploy the faux Durand, but at least it didn’t disintegrate into the bottle so I consider it a success.
@klezman@ScottW58 Hey, he’s entitled to his misguided opinion, more hot honey for me! Plus that stuff is not super hot, it’s a mellow heat.
I’ve had pizzas around town with spicy sopressata and a hot honey drizzle and always liked them. They’ve become something of a staple around NYC. I think there are other brands of hot honey, and apparently it’s easy to make at home, but Mike’s is good and he developed it in a really good pizzeria, so I’m happy to stay a customer. There’s a recipe from the NYT for hot honey shrimp that we enjoy, so it’s not just for pizza.
My sopressat wasn’t spicy, but the hot honey worked well we thought.
Would have loved a rib roast but kids wanted turkey so brined overnight spatchcocked and smoked. At least it was really juicy… And a boatload of sides.
@kaolis@klezman@ScottW58
Best turkey I ever had was one my friend’s brother smoked for like 2 days. The meat fell right off the bone and melted in the mouth like butter.
@chipgreen@kaolis@klezman
It was smoked at around 275 for 4 hours and came out perfectly. Time will depend on size this was about 13 lbs. Yeah after smoking my first one a few years ago I will never go back to the oven, really tasty.
@chipgreen@kaolis@ScottW58 Best turkey I’ve ever had was deep fried. It was so juicy throughout and the skin was perfect everywhere. Second best was one I smoked on my grill.
I know, too many pics… however…we were supposed to go to daughter’s in IL for Thanksgiving but that plan got kiboshed a month or so ago. Just the two of us we made the best of it (it was 70 here not 30 so that was a good start!) So a couple of weeks ago dry brined a couple of thighs and legs for 2 days and did a confit in duck fat and bacon grease. Out of the fat yesterday and on to a sheet pan for a bit to crisp it up, delish. Also found a new tasty bloody mix, picked our first pink variegated lemon for the bloody and out for a morning cruise… yes there was some other colored stuff
@chipgreen Ok…so I don’t remember a box in the road, but damn there it is in the pic…scratching the top of my head for like 5 minutes, expanding the pic, not remembering the box…and then it comes to me, that is not a box in the road, it’s a windshield bumper on the cart…it’s all about perspective right!?
@chipgreen@kaolis
Nice work! Lol I didn’t even notice that you were in a cart let alone what looks like a box in the road haha. But now that I’m zooming the pic why is there a little blue shark in the right storage thingy? I better stop zooming who knows what else I might find!
@chipgreen@ScottW58 Good eye on the shark…I could open a toy store with all of the crap left on the beach if I kept it. Found the shark a long time ago, kind of became my golf cart St. Christopher, need it around here when it gets busy…ha! (hey you asked)
@chipgreen@hscottk Really well.
The group has always been a very heavy red group, but it was the first dead soldier of the evening. Additional surprise, the Müller-Thurgau was second. Total about face from prior years.
We had turkey, ham, prime rib and the ‘normal’ sides…
@rjquillin
It’s still a baby compared to most of the IH sparklers we drink. With that, it seemed fresh and focused. Strong acidic backbone with primary nose and palate of red apples and some tertiary citrus zest. Great as an aperitif!
I figured it’s been a while since I’ve had any bubbly.
Enjoying this while my steak and Campo Grande chops rest.
@ScottW58 I need to create enough freezer space to try that pork!
Early dinner tonight?
@klezman
Yeah long day of golf and I’m starving
@ScottW58 I keep hearing how hard retired life is!
@klezman
You did not hear that from me! In my career I saw too many people work until they were dead, not for me ymmv
@ScottW58 I guess the sarcasm didn’t hit this time!
@klezman
Well to be fair I’m not the brightest light in the room!
@klezman @ScottW58 Was just staring at a package of those chops in the freezer about 10 minutes ago…hmmmm
@karenhynes can we get a Rat update?

@karenhynes @rjquillin Thanks…and cheesecake rules, no need to apologize!..probably should have tried the chard too for $12 or whatever it was
Friday night sushi with IH bubbles in honor of today’s offer. 2016 Classic Vintage Brut, to be precise. This vintage is really hitting its stride.
@hscottk Looks like a perfect spread to me (and molarchae)
@hscottk
Nice! but I have a torch I can loan you to put a little char on that raw fish
@ScottW58 A little sear never hurt anyone!
Scott might be on second dinner by now, but we’re just getting things sorted. Got some pork chops I’ll pan fry and decided to pop a 2018 Calera Muns Vineyard Pinot, Santa Cruz Mtns.
@CorTot From last month’s deal? Impressions?
Netflix & Vermentino
Y’all are starting November off with a bang looks like…
lamb…grits…
@kaolis You eat a lot of (very delicious looking) grits!
Don’t know what I’m drinking yet but I hope to be eating well! Porchetta been craving some since leaving Italy
@ScottW58 That’s a pork belly? Shoulder? Either way looks great. I just wait for the TJ’s version to show up every year. I’m sure it’s nowhere near as tasty as a proper Italian one, though.
@klezman pork belly, don’t waste your time with TJ’s make one!
Smoking a whole lamb shoulder. Got a bottle of bubbly in the fridge and still need to pick a red.
Supery Saturday, with our first fire of the season.
@chipgreen I’ve got the '04 and '06, how is the five?
@rjquillin
Past peak but still improves with air. Really good with Reese’s cups. Rutherford dust, plum, tart cherry palate with softening tannins.
Success crispy skin juicy interior, fennel and rosemary bomb.
@ScottW58 OMG. Fennel pollen, that looks like?
@InFrom @ScottW58 looks delicious!
@InFrom
You know it is!
@InFrom @ScottW58 nicely done my pork antenna taking note!
2018 for the skulls

Hopeful thinking… 2009 Victory.
@FritzCat I was going to open one of those the other night, the only one I have left of the '09. Decided to hold off. Had a nice '13 Estate Syrah instead, no complaints.
@FritzCat @InFrom
I believe Peter said 2009 was his favorite vintage of Victory.
@InFrom It was very good. Thought it was time to start drinking up the Wellingtons.
November seeing a little revival…nothing fancy here though
Making some stock for the holidays so ended up with a bowl of turkey neck and a little saffron rice
@kaolis
Ohh how was the Les Cailles? That looks great!
@ScottW58 Quite good. Didn’t see any reason to see what day two was like and my bride passed on her last glass…so…
These locally sourced pork chops are phenomenal.

After…
The wine pairing…
Oh, and here’s the recipe:
https://goodeandlocal.com/blogs/mangalitsa/apple-butter-and-sage-mangalitsa-pork-chops
@kawichris650 That’s one hell of a fat cap. What do you do with it? Trim? Render? Just eat it?
@klezman
A little bit of it renders, but the texture is unbelievable and you absolutely enjoy every bit of it.
@kawichris650
Good God that has to be delicious!
@ScottW58
Nothing compared to your porchetta I’m sure, but nonetheless the chops were delicious.
@kawichris650 @ScottW58 well that looks crazy good…pork fat, It’s What’s For Dinner! y’all are enablers, time to hit the farm for a couple of chops
Since they arrived today, popping a 2013 Virage Cab Franc Barrel Select
@klezman
That took little to no time.
Anything in suspension after the trip?
@rjquillin no sediment
Tonight is night 2 of the 2000 Marqués de Riscal Rioja Gran Reserva. Cork was soft, but presented no problem for the Ah-so. @pjmartin

And pimento cheese saved the turkey burger
With fried chicken and jo-jo’s.
@chipgreen The largest collection of wine I’ve ever seen has a bottle for every occasion.
grilled smash burgers and zin.
A few from last week. Wed wine dinner. There were only three of us last week.
Champagne club. Back of the bottles. The front pic was blurry. With spicy fried chicken, flatbread, and cheese. Delicious!
@chefjess You drink more top notch and interesting wine in a week than I do in a year!
Just burgers and cheap Bordeaux, forgot to pickup fries or better yet tots so there will be lots of green stuff according to the boss
@ScottW58 Good cheap Bordeaux, perfect for washing down evil green stuff
@kaolis
And it was good cheap Bordeaux
Happy Wednesday!
@kawichris650 So, how do they compare?
@davirom
I knew which wine was which, but it was truly a blind comparison for my friend. He said he liked the Wellington better, and I agreed.

@kawichris650 Icewine is always a good choice.
2015 Turley Pesenti Vineyard Zin
A bit pruned but good. Lighter than its 15.7% alcohol would suggest.
A few days ago.
Bankruptcy pickup. To go with bbq pulled pork, slaw and corn/black bean salad. This wine is from Conner Lee vyd., as was one of the wines in the last Gard offer here.
Nothing to see here, just tubed meat and these beauties I found at Costco!
@ScottW58 Must be a cal bene. We don’t see that type of thing at costco in the mw. Of course, your wine selection is amazing compared to ours (I’ve seen the differences first hand).
@jmdavidson1 @ScottW58 maybe the whole West coast. They come from Oregon and Washington I think.
I’ve gone through 4 boxes already and have 5 or 6 more waiting. My favourite time of year to go to Costco.
@jmdavidson1 @klezman @ScottW58 How’s that Becklyn? Drank one last year, no notes, two to go
@jmdavidson1 @kaolis @klezman
It is really quite good! Really nice balance, I think these need time. The last one I opened a few years ago was not nearly as good.
The weekend couldn’t come soon enough. With cheeseburgers.
This is tasty
Wine was a 2014, but then I opened it and put my glasses on and by gosh it turned into a 2018
Another bin end Harris Teeter ribeye. I just tossed them in the freezer in the store packaging, don’t want them going bad…
Went to a wine dinner last night. The owner of Jax Vineyards in Calistoga was in town, showing off their Y3 line of wines.
Regular Wed night wine dinner. Very frustrating that no one in this group decants. Those 2001s took a few hours to open and by then we were leaving.
@chefjess always an interesting mix
2021…rib tips in the smoker, that mess is smashed red taters, made some slaw…
Lovely Sat afternoon
@chefjess apparently!
@chefjess @kaolis
Yeah but what did you drink for dinner
@kaolis @ScottW58
Lol. The carrilon actually ended up being dinner. We finished the other five early evening.
@chefjess @kaolis @ScottW58 much better than the lineup for the wine night I was at yesterday. The most interesting wine somebody else brought was a Carucci from Santa Ynez and a Poggio Valetto white blend.
@chefjess Such a spectacular collection. Enjoy! A lovely afternoon indeed. 50 years ago we called it day drinking.
I love pilaf so threw some together with the chanterelles and a ribeye and a really nice Bordeaux, mostly cab franc.
@ScottW58 Good use of the fungi…vino looks interesting
2018 Cavedog red
@hscottk how was it? One left I think
@kaolis I’d give it more time. Fruit still dominates but it’s not flabby. I think it has enough acid to work well with food when the fruit calms down a bit more.
2010 Wellington Zinfandel Meeks Hilltop Ranch
From one '21 SC to another… finished up a '23 Pieropan Soave
I think these both came from the Mothership.
Day 2, poured 2 glasses. Good wine, good acid and some tannins. Very serviceable.
SWMBO didn’t like it, had to pour hers out and substitute a “better” wine.
So…
Ahhh…Much better!
@FritzCat I remember ratting the Fetzer!
@FritzCat @Mark_L
I think I’ve still got nearly a case of those, after that fulfillment/packing/shipping mishap.
Yeah, I’ve got a lot left too, after being affected by the mishap. Drink up…it’s not getting any better.
@FritzCat @rjquillin Not sure I remember the mishaps on this one (I didn’t order) – nothing in the thread.
@FritzCat @Mark_L
The offer that got mixed up was the Wed, Jan 8th 2020 one for the Red Blend that had many in a tizzy.
2016 Fetzer 50th Anniversary Reserve Red Blend, Mendocino County
Blend: 70% Syrah, 20% Zinfandel, 10% Petite Sirah
however what was either initially delivered, or delivered to some was
2016 Fetzer Cabernet Sauvignon 50th Anniversary Reserve
Clearly not what the second Jan 8 offer was that got fowled up. I think all that ordered ended up receiving both bottlings. Don’t recall if Fetzer delivered an incorrect product, or if it was a fulfillment error; I think the former.
The earlier CS offer that had no issues Fetzer 50th Anniversary Reserve Cabernet Sauvignon
was on Wed, Feb 6th 2019.
This all make any sense?
Just happened to have the blend within arms reach, really, under a kitchen table.
@Mark_L @rjquillin I just pulled out one of these to try too. I have far fewer of the Fetzers than I thought…and that’s ok.
@ScottW58 yumster… I’ve yet to do a brisket right, too small of pieces I think or maybe it’s my small Smokin-It…but everything else turns out fine in it
@kaolis @ScottW58
That brisket looks amazing.
@kaolis
Turns out fine is all that matters! I screwed up many before I got the hang of it.
@ScottW58
Looks delicious.
2016 Qupé Syrah Bien Nacido Hillside Estate
that’s been open now for a week or so and really hit it’s stride
@rjquillin I’ll never have your patience
Hometown hooch
A quite tasty cheap Bordeaux, got lazy with a sheet pan 'za
@kaolis
That is some good lookin’ lazy 'za!
@chipgreen @kaolis
Yes it is!
@chipgreen @kaolis @ScottW58
Yum!
Toccata Tuesday (formerly known as Mandolina Monday), with grilled cheese, tomato soup and an “onion boil”.
@chipgreen
howzit, the Toccata?
Sitting on some.
@rjquillin
Solid. Cork was in great shape. Paired well with the food, especially the soup. Plenty of fruit and life left, IMO.
@chipgreen
Well shit that looks delicious! Man that onion boil
@chipgreen I’m always amazed at some of the wines you drink that i purchased years ago and are long gone from my inventory. I do recall this wine being rather tasty.
@chipgreen @jmdavidson1 @ScottW58 Yeah some of y’all are way better than I am on hanging on to wines. But then again I don’t have 10,000 bottles to choose from…ha!
Had to look your onion up, never met an onion I didn’t like, have to give that a go
Leftover brisket and green stuff, with this cab franc. Smells like cab franc but does not much taste like it, but damn it’s really delicious!
@ScottW58 Bunch of Detert back in the day, been awhile.
Had a nice dinner last night. The Montrachet was amazing.
@klezman Nice indeed. Weather must be cooling off, lots of good Nov wines
@kaolis Such as it does in West LA, I suppose
But if you tell me “choose some reds and whites under $200 from this wine list” that is a mission I will happily accept!
2020 Sleight of Hand Syrah Psychedelic Stoney Vine Vineyard
with ribs, smashed truffle taters and g-beans;
error with my hasty selection, entirely too young
Akaushi wagyu patty, nothing green in sight
@kaolis
That is an impressive looking patty!
@chipgreen @kaolis Agreed! And without a bun also…nice touch.
@chipgreen @kaolis @klezman I just wonder what’s hiding beneath the cheese.
Happy Wednesday!
2010 Wellington Cabernet Sauvignon Mohrhardt Ridge
@catcoland How’s that evolving?
@klezman My last MR 2010, it was outstanding. Fresh and lively for it’s age with good depth and complexity.
Steak place last night - 32oz prime rib on the bone cooked perfectly. The wines were spectacular.
@chefjess Are any homes for sale in your neighborhood?
@chefjess @msten
Maybe we could Air BnB it, get a couple dinners in.
@chefjess @chipgreen @msten I’d be down for that
Someone is on a roll…my days of tackling, well at least finishing, a two pounder are over… ha!
@kaolis
I still have 2/3 in the fridge and that’s even after lunch today. This is going to take days. Luckily I have some wine left as well
You say Franken-stein, I say Flanken-stein. 2012 on the cheapie German
@kaolis
Lol, I have never seen flank steak cut like that. Looks delicious, though.
@chipgreen Flanken cut short ribs…so not flank steak, but cross cut beef short ribs
2009 David Noyes PN w/steak and chicken stir fry, spring rolls and some San Francisco treat.
@chipgreen Geez, another forgotten wine…and long live the SF treat
@chipgreen ahh the San Francisco treat brings back fond memories!
2019 Kelley Fox Maresh Royal Ann block
2014 Lobo CS, Atlas Peak, from Wulff Vineyards. Part of CS mystery case. With Flannery hanger stroganoff.
@davirom
What did you think? I have about a case of Lobo wines from UC and haven’t opened any yet.
@chipgreen I really liked it, SWMBO less so. I think the 2014 is in a good place with nice balance. I’m happy we got it. FWIW, both of us are mostly, but not quite, over colds.
2018 Cabot Cab Franc, Marier Vineyard, Humboldt County
This is nice stuff…
pork, rosemary mustard sauce…
@kaolis Your plates are always colorful, even if they ofttimes lack green.
@rjquillin wine bottle is green???
@kaolis @rjquillin
@kaolis
Yum! Screw the green! Green bottle is acceptable besides what great story started over a plate of salad vs a bottle of wine?
I have never even liked a bottle of Monontepulciano until this one, and I loved this one with spaghetti and meatballs.
@ScottW58 Now that’s what I call plating… a face only a mother could love… ha!
@kaolis
Ha! About time someone noticed
@kaolis @ScottW58
I almost made a Sesame Street comment. Then I almost made a Flying Spaghetti Monster comment. Then I thought of kylemittskus(sp?). Then I got distracted and moved on…
With a long arm into the cellar
2008 Lang Wines Barbera Oakmont
OK, a woot just 12 years ago actually;
poached salmon and halibut and pasta with red tomato things, 'shrooms and capers
@rjquillin
How’s the Barbera doing? I still have a few stashed away.
@kawichris650
I debated between the 06 and 08 and ended up with this; purchased two each. Seems fine, but my first so I really don’t have a comparison. I drank one of 06 long ago, cork closure, this, a twisty. Can’t say it was fresh, but it sure wasn’t at all tired either; drank well actually.
w/pizza.
Over at my sister’s for pot roast so these seemed right?
@ScottW58 Well those two wines are a bit different from one another I would think. How’s the syrah? Just made my first order
@kaolis
Absolutely delicious when you want/need a big boy! Never got to the Rioja.
With a thick rib steak and green, orange, red and white stuff.
Smoked brisket, smoked duck, and beer.
Seems like it was a good Saturday for y’all…
Ok, looks like hell but hey…more, yes more Harris Teeter aged strips…the wine was a pleasant surprise, a $20 WTSO that we both thought was really good
@kaolis nice! You know I’m a person who likes a steak tartare with a quail egg once in a while but damn man if you need a torche to warm up the middle of that steak I will happily send you one
@ScottW58 I did kind of over cook it didn’t I?
Took these to a “Night at the Races” benefit for a local FOP.
@chipgreen
familiar faces there,
where’d you find the '12 Ardente?
Don’t think any of mine are that fresh.
@rjquillin
They had Ardente on WineSpies.
Last night was a parent thing at the kids’ school so it was either crappy kosher wine or several liquor options. So I had a decent anejo tequila, Glenlivet 14, and a random central European brandy that was quite tasty that I should have taken a picture of.
2021 Bell Wine Cellars Syrah
($7 @GO)
Flannery Flanken style braised ribs, polenta and veggies
Taste: 7
Presentation: 1
The Bell shows some promise, seems an entry level bottle; For $7, it delivers. Give it time.
2011 Siduri PN w/hot buttered cheesesteaks and fondant potatoes. Thanks, Scott, for the inspiration.
@chipgreen
hope you liked them!
@ScottW58
Loved 'em!
@chipgreen @ScottW58 Keep saying I’m going to but haven’t tried those taters yet. Siduri hanging on?
@kaolis @ScottW58
The Siduri was in great shape. Well balanced and food friendly but also great on its own. Earthy and savory but with plenty of fruit left. Cherry and sage with a hint of eucalyptus. Medium, silky tannins and medium+ finish.
@chipgreen @kaolis @ScottW58
2014 BD?
I forgot I even had any of these
@kaolis @rjquillin @ScottW58
Yes, '14 BD.
Photo won’t upload!
1996 Ravenswood Monte Rosso Zin
With Flannery hanger
@klezman what format is it in?
@rjquillin not a format issue. Internet/server issue.
Worked today!
Just ordered some tacos and popped a bedrock, very nice. And had to try this PX fortunately it came with a little vile to try before you open the bottle. Unbelievably delicious!
@ScottW58 So the vial was certainly not vile?
@ctmariner lol oops
@ctmariner @ScottW58 Never heard of that PX
Not that I’ve bought that much but just when I say I’m done with De Negoce I get suck into a few lots of pinot…tossed a little belly and wings in the smoker
@kaolis I suspect DN is doing quite well with the wine glut of late. Too bad he’s likely taking away lots from what could be amazing wines under the CM label.
@kaolis @klezman CM label? There’s a CM label?!
@davirom @kaolis Well, they’ve done a bunch under meh, at least.
@davirom @klezman “He” is no longer as far as Cameron goes… Cameron sold to Martin Ray/Courtney Benham
@davirom @kaolis I did not know that. So he built it quickly and then sold it to focus on the beef venture? I thought Cameron was the main negociant so I wonder how things have gone since he left.
@davirom @kaolis @klezman
since 2017 Likely a non-compete on wine had him go to beef until it expired and De Negoce was founded.
And, from Wiki
In July 2024, Vintage Wine Estates filed for Chapter 11 bankruptcy protection, with plans to sell all of its assets, including Cameron Hughes Wine
@davirom @kaolis @klezman
Well ask @kaolis how’s that bottle drinking?
@davirom @kaolis @klezman @rjquillin
Pretty sure the old Cameron Hughes wine is not De Negoce. That was sold off long ago?
@davirom @kaolis @klezman @ScottW58
Re-reading, I find this thread humorous.
kaolis talks about his infrequent DN (De Negoce) buys, excepting PN
klez mentions DN could be bottling for CM, (and it begins to derail)
davirom questions CM labels (thinking CH/CM?)
klez reminds WD has had juice bottled for meh (by what entity?) Did the old CH or the new DN bottle for meh, as many did for WW and we hope, someday, someone will for CM?
kaolis reminds of the CH sale, klez and I pile on with additional worthless information, and it’s totally off the rails now.
ScottW tries to right the wreck (how was the wine?
I have a moment of (clarity?) thinking I now understand…?
[note: I just work up from a nap]
@davirom @kaolis @rjquillin @ScottW58 You rea incorrectly, Ron!
@davirom @kaolis @klezman @rjquillin @ScottW58 it was a confusing read but managed to follow it despite some misinformation.
@CorTot @davirom @klezman @rjquillin @ScottW58 Confusing?..nahhh…Cameron Hughes started Cameron Hughes Wine.
@davirom @kaolis @klezman @rjquillin @ScottW58 adds up, internet research came up with this.
In early 2024, Hughes sold de Négoce to Martin Ray Winery in Santa Rosa. Hughes left the company, and the new owner rebuilt the team.
https://www.sfchronicle.com/food/wine/article/de-negoce-wine-sale-19816302.php#
You can tune a piano…a little slaw and rice cracker crunch
@kaolis That tuna looks overcooked
@klezman Almost, dang cast iron was hotter than I thought!
Opporknockity only tunes once.
@FritzCat well that’s confusing
@klezman It’s an old joke about a piano tuner named Opporknockity…guess you had to be there.
@FritzCat guy waits forever, has his piano tuned by the famous tuner, Opporknockity. After a bit guy fiddles with the piano putting it out of tune. Calls the tuner back requesting a return visit but is rebuffed. Because… wait for it…
Happy Wednesday!
This recipe is Fall on a plate.
Apple Butter and Sage Mangalitsa Pork Chops
@kawichris650
Looks delicious!
@kawichris650
Searching for some of those chops beautiful!
Jumping on the Wellington Wednesday train, with meatloaf and I had to do the fondant potatoes again. So good and the wine is doing great for a 17 year old!
@chipgreen those taters look delicious and the meatloaf time to make some!
Scherrer Zinfandoodle v. 2.3 w/homemade pizza
@chipgreen
Yum!
@chefjess @chipgreen Agreed, looks great!
@chefjess @chipgreen @klezman Double yum
@chipgreen Nothing beats a home made pizza. I have been receiving major nudges ever since the weather turned cooler.
How’s the vino? Zin mixed with poodle?
@InFrom
Lol! There is a blurb on the back label about how the winemaker experimented with making Zinfandel as a teenager and his Grandfather referred to those efforts as “Zinfandoodle”.
Regular Wed night wine dinner group. Food was not bad, but we won’t be rushing back. Wines were lovely.
@chefjess
Wednesday Night Ballers Club!
2019 Suzor Wines Pinot Noir Eola-Amity Hills, a BD '23 pickup. With pan-fried gnocchi/tomatoes/turkey sausage/etc.
@InFrom
Gnice Gnocchi!
@chipgreen
@InFrom howzit?
@rjquillin The wine? Excellent. Looking forward to whatever they have up their sleeves for next BD.
@InFrom Yes, that.
Perhaps we picked up the same 6-pac.
@rjquillin Almost certainly! Have you drunk any of it yet? Looks like I have only 1 left of the six.
@InFrom Naw, haven’t touched any of them, as mine all went directly to an off-site locker. Your post made me wonder if I had any, as it sounded familiar.
@InFrom looks delish!
@InFrom
I would eat that every night and twice on Sunday
@ScottW58 Be careful with that, you might end up becoming a little pillow of potato matter.
@InFrom
Lol and that’s a problem??
@InFrom @ScottW58
I resemble that remark
pounded out a little veal with leftover pasta fried in a little butter and olive oil
@kaolis
Looks great! Only a few capers short of a Piccata.
@kaolis
Nice how was the wine?
@ScottW58 Delicious. She used to be an assistant winemaker at Kutch and he is/was same at Rhys. Will probably go the distance but hey. Just ordered a few of the '22
2013 Keller Estate Syrah Rotie
That’s smashed taters under the veggies
I bought some ox tails to make my favorite stock for french onion soup and had some leftovers, threw them in the pressure cooker with potatoes carrots, garlic, carrots and spices. Buzzed the potatoes and half the carrots in the juice to make the gravy. Damn this is good with two new arrivals. I’m happy!
@ScottW58 Garagiste? WHWC?
@klezman @ScottW58 Don’t know the Raen…how’s the Toscana? I’ve been on the hunt for that price range
@klezman
Winery and garagiste
@kaolis @klezman
The Toscana was okay, tasted correct but maybe a little boring. To be fair I popped that bottle the second it fell off the truck so maybe that had something to do with it? Don’t think I will be running out to find more.
@kaolis @ScottW58 I had some of their 2012 Il Toro blend that was pretty solid as a mystery wine. Have some of their 2015 Brunello that I haven’t tried yet.
@kaolis @klezman @ScottW58
Raen produces a rose each year, ‘Monarch project’ which donates a portion to the butterflies. Lovely domestic rose.
@kaolis @klezman
Likely the brunello will be great, this was probably the low end bottling with grapes that did not make the cut? Now I get to put on my “I’m stupid” hat for a week to remind myself that the last thing I need are daily drinkers
@klezman @ScottW58 Stupid for overbuying daily drinkers…raise your hand
@kaolis @klezman @ScottW58 I know my cellar is a tiny fraction of the size of others on this forum, but nevertheless I buy and drink the cheap(er) stuff and put off drinking the “good stuff”. And ask myself “why?”. Any night could be Drink That Bottle Night.
@davirom @kaolis @ScottW58 We do a lot more of that. “Daily drinkers” are running low, but the catch is opening a $50 bottle for somebody who’d just as likely drink Two Buck Chuck. (Yes, there’s plenty that’s cheaper, but you get the idea.)
@kaolis @klezman
Lol I hear ya!
@davirom @kaolis @klezman
@kaolis @klezman @ScottW58 So after that mini-rant I went over to the new UC and picked up 6 bottles of champagne. One was upgraded to the
2006 Louis Roederer Cristal Brut Champagne, msrp $400.
@davirom @kaolis @klezman
I suggest you drink that one first because if you get hit by a bus the next day you’re gonna be pissed!
@davirom @kaolis @ScottW58 score!
Are they sending out emails with the new offers? I thought the one for the weekend was sold out.
And if you “need” help with that upgrade just let us know
@klezman No email, I just happened to click on the link you provided.
@kaolis @klezman @ScottW58 The bottles showed up today, much faster processing than CM. Along with the wine there was a velvet goodie bag.
@davirom @kaolis @ScottW58 I got the same goodie bag, too. Not too shabby.
@davirom @kaolis @klezman @ScottW58
Me too but unsure what to do with the thing pictured on the top left?
@chipgreen @davirom @kaolis @klezman @ScottW58 It looks like some kind of aerator? Or is it meant to stop the bottle and pump the air out?
@chipgreen @InFrom @kaolis @klezman @ScottW58
This. The thing on the top right is an aerator.
@chipgreen @davirom @kaolis @klezman @ScottW58 Thanks for ID-ing the aerator.
Meanwhile, my 3-pack is due tomorrow. Let’s see if the smallest order size also rates the swag.
@chipgreen @davirom @kaolis @klezman @ScottW58 Swag confirmed.
@chipgreen @davirom @InFrom @kaolis @klezman @ScottW58
Yes
@chipgreen @InFrom @kaolis @klezman @rjquillin @ScottW58 I tried to do this last Sunday but I couldn’t get the blockquote to work.
@chipgreen @davirom @InFrom @kaolis @klezman @ScottW58
You need a CR/LF to create a blank line, then a
">"with text following
followed by another blank line as above.
Yep that blob is a meatloaf, beef/veal/pork, shmeared a gallon of ketchup on top and into the oven …thanks to @chipgreen for the inspiration
Saturday afternoon bubbles
@chefjess
How was the 13 CDC?
These guys were two claw yesterday and one claw today…and who says Meursault doesn’t do crab…and who needs a proper wooden mallet?
@kaolis
You still getting stone crabs? Lucky bastid hammer works!
Leftover chili leftover wine, life is good!
@ScottW58 leftovers = lo-stress meals
tonight was similar here as well
@ScottW58 smoked chili? Sounds great!
How are those Barbarescos? I haven’t opened any of mine yet.
@klezman
Yeah I like to give the chili just a few hours of smoke cover it and cook on low for for about 4 hours more. The leftover brisket chunks just melt in your mouth
The tannin is still a bit sticky but really delicious!
Corkage with a waygu ribeye. Both were delicious though wine made the meal.
Speaking of basic bottlings from a good producer…and finished up Lot 501
Since I’m cooking for the holiday just a bunch of leftovers and this beauty.
Grand daughter and BF in town, Japanese cuisine sounds good.
@rjquillin
looks like some apple tart and 2006 Wellington Old Vine Port Estate found their into the evening as well.
@rjquillin That’s quite a spread!
@chipgreen Is that a sweet or dry white Merlot?
@klezman
Dry and surprisingly good!
Happy Wednesday!
Have a great T-giving, all!
@InFrom
Looks great! Happy holidays oh and what’s this Mike’s hot honey? Something I need ?
@InFrom @ScottW58
Sweet + heat = imo
@InFrom @klezman
Too bad for you talk to me @infrom
@klezman @ScottW58 Hey, he’s entitled to his misguided opinion, more hot honey for me!
@InFrom @ScottW58 up, enjoy it all you want! I’ll save the sweet food for dessert
@InFrom
That pizza looks amazing and I am always down for some hot honey!
@InFrom @klezman @ScottW58 I’ve seen that in stores here, never tried. Did not used to be a sweet heat guy but in my old age I’ve learned to appreciate
@InFrom @klezman @ScottW58 Edit! I have had it, drizzled on 'za in Champaign, IL… speaking of pies, that’s pretty nice looking…great minds
@InFrom @klezman
Nice on my list!
About to open a 2018 Terre Molin Amarone della Valpolicella and grill some steak.
A brilliant bottle that is maybe a year or two from it’s end, for $35 bones I picked up a couple more for near term drinking!
@ScottW58 I should go pick mine up…
When you around to get together? It’s been too long again.
This cold weather had me in the mood for beer tonight.
@kaolis
Beauty is only cheese deep. But that’s a beauty!
I know it’s turkey day, but let’s be honest… would you turn down prime rib?
Happy Thanksgiving everyone.
@kawichris650
I’d take this over turkey any day!
Cheers and Happy Thanksgiving!
@karenhynes @kawichris650
Yes this is the correct answer!
@kawichris650 I’ll take that slice right over…there.
@kawichris650 I don’t think I’m capable of turning down prime rib…
@kawichris650 @klezman sealed the deal for my Christmas menu
@kawichris650
That looks really tasty!
Would have loved a rib roast but kids wanted turkey so brined overnight spatchcocked and smoked. At least it was really juicy… And a boatload of sides.
@ScottW58 looks delicious! Also you seem to be going through a lot of blini these days!
@klezman @ScottW58 yum…nice mix on the vino. How long in the smoker? Never smoked one
@kaolis @klezman @ScottW58
Best turkey I ever had was one my friend’s brother smoked for like 2 days. The meat fell right off the bone and melted in the mouth like butter.
@chipgreen @kaolis @klezman
It was smoked at around 275 for 4 hours and came out perfectly. Time will depend on size this was about 13 lbs. Yeah after smoking my first one a few years ago I will never go back to the oven, really tasty.
@chipgreen @kaolis @ScottW58 Best turkey I’ve ever had was deep fried. It was so juicy throughout and the skin was perfect everywhere. Second best was one I smoked on my grill.
2016 Nota Bene Cellars Merlot Ciel du Cheval Vineyard
2021 Shiba Wichern Auxerrois Blanc Havlin Vineyard
2020 Stereophonic Wines Cabernet Sauvignon Sabretooth Old Vine Old Bailey Vineyard
@kaolis Not too shabby!
@kaolis
Why is there an unopened box of… something… in the middle of the road? Stop the cart but don’t spill the drinks!
@chipgreen @kaolis
Nice work! Lol I didn’t even notice that you were in a cart let alone what looks like a box in the road haha. But now that I’m zooming the pic why is there a little blue shark in the right storage thingy? I better stop zooming who knows what else I might find!
@kaolis
LMAO! I thought I could even see shrink wrap on it!
@chipgreen @ScottW58 Good eye on the shark…I could open a toy store with all of the crap left on the beach if I kept it. Found the shark a long time ago, kind of became my golf cart St. Christopher, need it around here when it gets busy…ha! (hey you asked)
T-day in Yuma
@rjquillin
Yuma doin’ a good job there!
@chipgreen @rjquillin Yeah, nice lineup! How did the Resilience show?
@chipgreen @hscottk Really well.
The group has always been a very heavy red group, but it was the first dead soldier of the evening. Additional surprise, the Müller-Thurgau was second. Total about face from prior years.
We had turkey, ham, prime rib and the ‘normal’ sides…
@chipgreen @hscottk @rjquillin most have been a large group to have turkey and ham and prime rib!
@chipgreen @hscottk @rjquillin Who needs sides after that trilogy
@chipgreen @hscottk @kaolis @klezman

Thanksgiving wines
@chipgreen not so shabby yourself!
I’m still working on those '08 and '09s too.
How’s the Gratitude holding?
@rjquillin
It’s still a baby compared to most of the IH sparklers we drink. With that, it seemed fresh and focused. Strong acidic backbone with primary nose and palate of red apples and some tertiary citrus zest. Great as an aperitif!

@chipgreen @klezman Never heard of it. Looks yum.
