just bought a bottle of imported Irish Mead. Look forward to comparing it to the domestic I have had in the past (And one from Aussie land many moons ago)
“Late Harvest” dessert wines are produced by leaving the grapes on the vine for an extended period in hopes that they will succumb to botrytis aka Noble Rot, a fungus which penetrates the skin of the grapes, causing them to dry out, which increases the concentration of sugars within the grapes.
Icewine is a dessert wine type where the grapes are harvested in below-freezing conditions so that the water content freezes while the sugars and dissolved solids do not. There is less yield per grape, but the result is much more concentrated.
Mead is made with honey

Red wine grapes can produce a white wine so long as the skins aren’t included in pressing and fermentation.
