I’ve been wanting this type of question for years, even sent in a request years ago. I see all these requests or statements as to what the wine tastes like on the 2nd day. In our house, there is no second day. We serve with the meal, then retire to patio or living room with part of the 2nd glass. A lot of times wife and I just continue at the table having a conversation on a number of topics
My wife’s family in Germany would keep bottles that had been opened for several days. And they would just keep them in a cabinet in the corner of the living room - no refrigeration, no argon gas topper. This was partly because my father-in-law preferred Rieslings, while my mother-in-law preferred reds like Dornfelder.
I always found the wine there an enjoyable experience. It made me wonder what’s going on back here that we need to be so anal about preserving wine.
My cousin in Texas, a retired MD, and his wife were limiting to 4 oz. of wine per day for health reasons. I think they may have cut down to 2 oz. since then, which would be 6 days per bottle. I doubt they do anything beyond putting it in the fridge.
Personally, I have had some Madeira open for months and still yummy. But then maybe I have a taste for oxidized wine.
