The 2012 Pavi Dolcetto, Napa Valley Dolcetto is a delicious, medium bodied wine made with 100% Dolcetto grapes. It is the every day drinking varietal from the Piemonte region of northern Italy. The Dolcetto flavor profile, although often thought to be a sweet wine, is not a sweet wine. It is unique to its own flavor but lies somewhere between a Pinot Noir and a Zinfandel. The grapes are whole berry processed and they are then barrel aged for 3-4 years in 100% French Oak, 10% of which is from new French Oak barrels.

For a grape that I read isn’t supposed to be known to age all that well, I’m still drinking some of my '05’s from a case I got on WW back in '13 for ~$10/btl. I pine for those days and prices.

Previous offering of this on Woot was delicious! I bought it thinking at about $10/btl. it would be something to have around the house for large casual gatherings on the patio. I was surprised by how good it was. In for a case!

I am IN LOVE with the 2005 Pavi Dolcetto that I bought from WW. Calling this a daily drinker really undersells it. It may not have all the complexity of a fancy aged cab, but it simply tastes wonderful - a panoply of delicious berries and cherries balanced by tangy acidity and spices. And it ages!
If this 2012 is anything like the 05, it’s an autobuy (not for me - sadly, I have an overflow of cases in my basement right now, which I am working on…hee hee).
Love Pavi’s dolcettos! Yes, I do wish these were as cheap as that case from WW. That was a steal. I’d like the better part of this case but if anyone in DFW wants to steal a couple LMK.
You’re doing it wrong. The format ALWAYS begins with a slash (invoking the attention of the all-powerful-MEH), and then the command (giphy, in this case), followed by the phrase you want Giphy to interpret. Here’s an example:

I wonder why they did such a long barrel aging after a whole berry fermentation. My understanding is that the whole berry leads to having more light fruity flavors, but that more aging would diminish those. Intriguing.

We whole berry processs to slow down the maceration of skins during processing. We don’t get full whole berry during fermentation. But we do like the brighter red fruit aromas an moderate tannin structure. We aren’t making it in lighter style.
We also age longer as we look for oak integration. Which can take longer with only 10% new oak.
Just took an '05 out to supper tonight with some Italian themed dishes.
Fruit is holding up well and still a good firm tannic finish.
This is ageing quite well; only a few '05’s left.
If the '12 is anything like earlier vintages, this one can last nicely.
Now up to an eight year vertical.

@IcedCorn Very rich and smokey, not to be drunk after a light highland or speyside as very contrasting. Enjoyable slowly and on its own, but a strong and possibly acquired taste. Similar to the Uigeadail to be honest, but a little less smooth. If you enjoy one you’ll enjoy the other.

Or do they represent ORDERS, so they could be a mix of cases AND boxes?
