About the Wine
The 2016 Napa Valley Cabernet Sauvignon is part of our first ever released wine, the 2016 Napa Valley Rosé. This is a colorful Cabernet from Napa Valley. The wine is pretty mellow and easy to drink and it can also go with a great meal, especially at dinner with a really nice steak. We recommend letting the wine breathe for at least 10 minutes after opening it. Like all our wine productions the quantity is very limited. Enjoy Prohibido wines and make any moment special.

We were excited plenty when we got the email from Alice about ratting for this offering. But we were doubly excited to get the package—two bottles of Prohibido Cabernet! We’d bought the 2018 Prohibido last year and enjoyed it very much.
While we were itching to try them right away, life got in the way as it always seems to. We picked up the package Friday night, and Saturday was a full day of kids’ piano lessons, soccer games, and most importantly the local model rocketry club’s annual night launch. We considered bringing the bottles to the launch site—wine and explosives, what could go wrong? But the logistics of keeping them at cellar temperature meant we waited until we got home and put the kids to bed, to pop and pour at 10 PM.
Even in those late circumstances, we knew from first whiff that these were going to be special. Both were clear and richly colored garnet-mahogany, the 2016 with a touch of brick owing to its age. Without aeration they both already featured prominent fruits and earthy notes. Yet the two were different: The older 2016 felt warmer with more pronounced acidity and tannins, compared to its cooler-tasting, younger 2019 sibling.
We kept the bottles in the refrigerator overnight and then tasted twice on Sunday, at lunch and dinner.
The Prohibido 2016 on the nose was more red fruits such as raspberries, with a background hay-like note, the way some people describe saffron. On tasting, we noted blackberries, smoke, leather, a fair bit of acid, and “warmth,” with a moderately long finish. Although on PnP there was some classic Cab bell pepper, that mellowed out along with the tannins by our second and third tastings, replaced with cherry cola and dried fruits, along with perhaps some ancho chile. It paired especially well with our dinner venison steak au poivre (i.e., I ground a fistful of pepper into some leftover gravy), and with a well-aged mimolette cheese.
The 2019 was much darker fruits, violets, and woody forest floor elements of cedar and moss. It reminded us particularly of a secret-recipe fruit tea from Podhalanka, the famed Polish restaurant in Wicker Park, Chicago, or of haw flakes for those of you familiar with Chinese candies. Again, there was an initial black olive and bell pepper element in the finish, which largely diminished by our second tasting; tannins were also more noticeable by then. While this one went reasonably well with the venison, it excelled with spicy Chinese and Indian dishes, the coolness of the wine offsetting the heat of the food. It was also delicious on its own, with a range of flavors that continued to evolve as we drank.
But really, what you all want to know is what the kids thought. Here’s what they said after a couple of sniffs:
2019, 9-year-old: “That fruit I was scared to eat because I thought I was going to grow a tree in my stomach,” that is, pomegranate.
2019, 5-year-old: “Weeeird.” Upon asking him to explain further: “Umm…roses.”
2016, 9-year-old: “White pineapples.”
2016, 5-year-old: “Sunflowers.”
I haven’t the slightest idea what sunflowers smell like or what white pineapples are, but at least these seem consistent with the cool/warm elements of the two wines.
Overall, this is a fantastic package of enjoyable and thought-provoking wines. I could see myself pouring the 2016 at a big feast of a dinner, and then retiring to the fireplace with a couple of glasses of the 2019 among close friends. Or the other way around!
Well Odedi’s Wine Reviews Blog(?) had this to say about the 2016:
A pretty color of dark ruby with a wide reddish/ purplish rim.Fruity nose with blueberries, black cherries, blackberries, cedar, vanilla, earth, vegetables, tobacco, milk chocolates, coffee and black pepper.
Full bodied and smooth with medium plus acidity and long legs. Dry and fruity on the palate with plums, black cherries, currants, vanilla, cedar, licorice, chocolates, coke, tobacco, peppercorn, espresso, vegetables, herbs and earth. Medium plus on the finish with fine tannins, spices and tangy raspberries.
This is a very nice Cabernet Sauvignon from Napa Valley. Still young, and showing some vegetable notes, which will go away with time in the bottle. Easy drinking with mild complexity and a nice mouthfeel.
Good by itself or with food. Needs an hour to open up properly. Good now and will be better in the next 5 years.
I paired it with cheeses and crackers.

Sonoma County, CA June 08, 2021…the 2016 was awarded 96 points and “Best of Class” and “Double Gold”
And at the 2019 OC Fair Commercial Wine Competition the 2016 was awarded “Silver”
The 2019 was given a “Silver” award at the 2022 San Francisco Chronicle Wine Competition
2019 was also awarded “Silver” and 85 points at the 2022 Paris Wine Cup.
" A deep red medium-bodied wine with prominent red fruit aromas like plums, apple, and hints of baking spices like cardamom and cinnamon, well balanced acidity with a long aftertaste."
And just a note that the previous offer of 2018 Cabernet was California designation, not Napa.

What a Monday treat from casements!! Thank you for letting me rat on the Prohibido Cab 19 AND 2016. Open both bottles and let them rest for about 15 minutes in their glasses. As you’ll see from the picture, the colors are almost the same.
Prohibido 2019
The alcohol nose is quite overpowering, I do smell some big fruit behind it. As for the quasi pop and pour. Bing cherry strikes first, silky mouthfeel and a tannin led tingling on the tongue finish. In my experience (know enough to be dangerous) It’s a quite young and fruit forward cab, it’s medium bodied that will age well in the coming years. blackberry, black cherry, and baking spices after 40ish minutes after pouring, the alcohol nose has dissipated and what remains is blackberry, Black Cherry, Baking Spices with the tannins quite less pronounced on the finish. This is a buy and hold for a few years. You could have it as a nice sipper cab for now with red meat and in a few years it will be much improved. My guess this retails for $30 to $40, I’m sure casemates will offer at an attractive price point.
Prohibido 2016
The nose is a bouquet of ripened fruit, sweet and has my mouth watering. The mouth feel is silky smooth, the palate is muted and refined cherry and dark fruit, medium bodied with a big hit of tannin and tingling that lasts a good long while. Now 40ish minutes after pouring, the nose is muted refined black cherry and blackberry, Dry and fruity on the palate with plums, black cherries, currant and vanilla, sweeter than before. Medium to full bodied on the finish with fine tannins, spices and tangy raspberries. This is a very nice, to me, a nice red meat sipper.
