I’m amazed how well that last release, '13s, of whites are doing. I keep finding myself grabbing one, and then thinking I should find some other bottle 'cause I’ve only got so many more unobtainium bottles left and they just keep on going on.

That 2007 RRV PN is one of my absolute favorite Pinots and probably tied for my favorite wine made by Clark, along with the 2010 Two Jakes Cabernet Franc Roman Reserve.

Agreed on the 2007. I mention it every time someone talks about a PN. I think that’s why I’m not a huge fan of the varietal as Clark’s has been my favorite and I end up comparing. I haven’t had one that I have enjoyed more and Ive tried so many over the years. I have not had much luck with the Roman Reserves. Watched Clark’s videos, decanted, left them open for days, shook the bottle, and ended up pitching every one I opened. I’m not sure what I need to do. I still have at least a case left, but I don’t want to keep pouring them down the drain. I’ve been defeated. What do you recommend?

About the only wine of Clark’s (of those I have tried) that has been a disappointment to me was the Grenache Dry Rosé. I treasure my WineSmith Cabs, and love having a number of his Meritage.

I agree with the Rose, but will give it another chance. Maybe it just needs to age? Which seems odd for a rose, but maybe? I dumped the first bottle but still have the others to try periodically. Do you have any left? The reserves are an enigma for me. I don’t know what to do. Chip, what’s your strategy? I have the 10s and 12s. That 2007 PN is another story. Wish I had two more cases. This last St Laurent shipment didn’t make it due to the heat, every bottle leaked; box soaking wet, and arrived at 109 degrees. Broke my heart. I’m also in MO. I have also enjoyed all of the others, Rose being the exception. I’d like to try the Petit Verdot. I’m not sure that’s been offered yet on CM. I think the passion and love shines through in everything Clark touches as with so many others Winedavid has brought us over the years. I very much appreciate him, the winemakers, and this community.
@chefjess@chipgreen@winesmith To date I think I have only opened 2 bottles of the rosé. I think I have one in a rack to remind me to try it, and the other 9 buried in my basement in the shipping box. I have been intending to revisit it, but other things (bottles) keep getting in the way.
@chefjess@chipgreen@Mark_L It’s beginning to dawn on me that my rose palate seems to have been raised by wolves in the south of France. I really like that Grenache Dry Rose for exactly the reasons others don’t. It’s the opposite of the silly fruity frills so aptly termed “blush,” be they sweet or dry. It’s austere, bracing, edgy, minerally, cranky, at the same time seeming immature and over the hill. In short, it has character - a certain distinctive ugliness that I find very satisfying. It’s my go-to wine for all occasions. I drink about four bottles a week. There is clearly something wrong with me.

This conversation has taken a turn. I can only speak for myself, but was taken by surprise based on Rose ‘norms’. After the discussions during the offering and having tried a bottle, my expectations have changed. I absolutely will try the next bottle with no preconceived notions of how a rose should taste and with an open mind of simply tasting the wine for what it is. Please don’t take offense. I view every wine as a learning curve of what I enjoy and don’t enjoy. My tastes have certainly evolved over the years. I’ve learned to smell and taste different flavors and textures (this thread taught me ‘chewy’). You have one of the best PN I’ve ever had and I will continue to try each offering. Please see the thread for the positive and how much we truly enjoy your wines.

I have had some luck with using the Molly Dooker shake on the Roman Reserves in lieu of lengthy decanting. Maybe that will work for you?
@winesmith I should mention, the wax on the top of the bottle was brutal! I think you may have mentioned sometime (but perhaps a different wine) just pulling the cork through the wax, but I wanted to be able to see what I was working with (the cork) and was afraid it would get shredded trying to pull through that wax. Once I got the top of the wax cut off, I just used an Ah-So to extract the cork (it was in great condition). The wine was superb.

With Sablefish and pasta; yes, this is softening but I’m not going to search out my last two bottles for a few more years. Still quite delicate with zero signs of oxidation or VA (edited) and paired well. I did use the Durand to pull the cork.

@chefjess@Mark_L You do not need to rush to drink your Wellingtons. The Cabernets - especially Mohrhardt Ridge - will start to get into their prime windows at 11-14 years of age. Then they’ll last a long time after that. The only things I’d be in any hurry to drink (a relative term, to be sure, since there’s no rush) are the Meeks Zin and Englandcrest/Charlie’s Corner Syrah. The Estate Zin and Syrah will age for as long as the Cabernets and the Victory will go even longer.
Also, check on CellarTracker. You can see that many of us write notes as we try various vintages of everything. I often include notes of when to try my next bottle.
(Of course, taste being a personal preferences thing, you might prefer your wines more fruit forward and less complex. In which case, drink sooner!)

Thank you. I’ll hold on the Wellington month as I really do prefer more complexity. I have been holding most of the Wellingtons thinking they would age as I seem to have an abundance of Cabs and Victories. Found several Estate Syrahs/Zins in the bunch. Reading the thread with the 2020/2021 windows I panicked. I was moving things around with all of these recent offers arriving and have found so many treasures from the days of ww. Brings back fond memories and a little fear hoping the windows have not closed.

Knocking down an ol bucket of chum with some pesto chicken cause Basil seems to be growing like weeds around here! Big boned with some oak but the tempranillo is upfront and mouthwatering juicy acid keeping it bright.
Really nice wine which confirms my suspicion that Marcus has been making great wines for a long time! Lots of Oregon strawberries @danandlisa and a soy/balsamic note and just a hint of browning. Nice stuff!

I was surprised to find it rolling around along with a bunch of other bottles I had forgotten about, which have likely been exposed to suboptimal temperature conditions at some point in time. I still have one more…
That said, the cork was intact, nose primarily dark cherry, “dirt”, and some herbal notes (I’ll go with tarragon, maybe basil). Palate has little dark fruit, earthy notes, and something somewhere between herbal and medicinal (but not in a bad way). Kind of that tarragon, slightly licorice range, maybe a bit menthol? Definitely still some tannins. Medium finish. Better with food than without. By night 3, there’s no discernable fruit, mostly earthy. I wonder if @lucasmeeker has any of these left or has opened one recently and can chime in???
I wonder what other treasures are lurking in storage I’ve not looked at for a long time? Sadly, I suspect there’s a bunch that will not be good anymore.

I wouldn’t be surprised if it still hangs on and is interesting for another 10 years or more, but it’s not one that has performed like the 05 Four Kings, for example.

Thanks so much for your input, Lucas! Maybe I’ll let the other bottle roll around for a while longer to see what happens. Structurally, I think it could hold a fair bit longer…I’m just not sure doing so puts it in a “flavor place” that’s in my preferred zone. It’s still quite enjoyable! It was a pleasant surprise to entertain me for the weekend!
Served chilled as @tercerowines suggested. Fun and everyone enjoyed. It certainly had a ‘swiss chard’ thing going on for me. Brightly acidic, a little green. High red fruits as well.
I still have some more of this 2016 aberration for purchase - and even a few Magnums, too! Watch for my first barrel-aged Cab Franc in 2022 - and nope, not on #casemates (sorry) . . .

@chefjess I was thinking of you when I pulled the Roman Reserve. While there is a little more earth and a little less fruit than I remember, still an extremely enjoyable bottle and a good food wine. Did not decant, just PnP.
We used a filtered pour spout for the Two Jakes Roman CF, which had a fair amount of sediment.
All wines sourced from either WW or CM with the exception of the Tank Garage Truth or Dare (Invino) but it was theTank Garage Skin Flick wine on Casemates that introduced me to the label in the first place.

@chipgreen@rjquillin There was one of the deals, I think for the 2014 Cab, that he explicitly said he’d changed clonal selection and a couple other things about the winemaking to appeal to the drink-now crowd.
Thank goodness he had his ax with him that night. It was an amazing experience. Hearing a Beethoven symphony played by a trio is a whole new way of listening for me, though apparently back in the day it was common that when these works debuted, they circulated among small ensembles before they made it to an orchestra. I had no idea.
Maybe the best part of the evening, when they came out for their encore, they launched right into Beethoven’s Fifth. The audience chuckled. So familiar! They must be joking. But they tore through that whole first movement. I could still hear the orchestra in my head attimes, but what was coming from the stage was riveting.

Yeah I noticed you could almost walk there Andrea and I were discussing it and it was easily in the top 3 or 4 restaurant meals we have ever had and it was takeout! Really easy to heat and fun put together when I got it home. I added the Charcuterie plate and it was fantastic. We have paid a hell of a lot more for dinners that were not half a delicious! Of course depending what you like to eat ymmv. If they are still doing Spain I would run not walk to get it, we may do it again if still available (I noticed they sold out the week before when I tried to get it)

2020 Briceland Vineyards Rosé Pét Nat d’Orleans Ishi Pishi Ranch, Champagne blend
with some tricked out Berserker Blend Burgers; almost crunchy on the surface while bright red and juicy in the center, some truffle, gorgonzola, Alderwood smoked salt, grilled onion, garden tomato and lettuce to fill out the toasted bun. The Ishi Pishi was a great pairing.
Not like Scott, but I’m a Sunday pauper today.

Easy flaming hot carbon steel pan crisps up the crust for 1.5 -2 minutes the first side second side
1 minute then into the oven to finish.

First time it’s really worked out well, best I’ve accomplished to date.

2016 Roark PN. Paper plates and plastic cups at our local BYO/AYCE sushi place, but managed to score actual wine glasses! The pairing worked well.
Picked up some fresh wild-caught Alaskan sockeye (a surprise for my wife).
Figured that a Pinot Noir would be a good match, and what better (from my stock) than this from @winesmith
Enjoyed it on our gazebo overlooking the trees and lake (and a swarm of hummingbirds around our feeders).

Do you have any left? The reserves are an enigma for me. I don’t know what to do. Chip, what’s your strategy? I have the 10s and 12s. That 2007 PN is another story. Wish I had two more cases. This last St Laurent shipment didn’t make it due to the heat, every bottle leaked; box soaking wet, and arrived at 109 degrees. Broke my heart. I’m also in MO. I have also enjoyed all of the others, Rose being the exception. I’d like to try the Petit Verdot. I’m not sure that’s been offered yet on CM. I think the passion and love shines through in everything Clark touches as with so many others Winedavid has brought us over the years. I very much appreciate him, the winemakers, and this community.
@chefjess @chipgreen @winesmith To date I think I have only opened 2 bottles of the rosé. I think I have one in a rack to remind me to try it, and the other 9 buried in my basement in the shipping box. I have been intending to revisit it, but other things (bottles) keep getting in the way.
@chefjess @chipgreen @Mark_L It’s beginning to dawn on me that my rose palate seems to have been raised by wolves in the south of France. I really like that Grenache Dry Rose for exactly the reasons others don’t. It’s the opposite of the silly fruity frills so aptly termed “blush,” be they sweet or dry. It’s austere, bracing, edgy, minerally, cranky, at the same time seeming immature and over the hill. In short, it has character - a certain distinctive ugliness that I find very satisfying. It’s my go-to wine for all occasions. I drink about four bottles a week. There is clearly something wrong with me.

This conversation has taken a turn. I can only speak for myself, but was taken by surprise based on Rose ‘norms’. After the discussions during the offering and having tried a bottle, my expectations have changed. I absolutely will try the next bottle with no preconceived notions of how a rose should taste and with an open mind of simply tasting the wine for what it is. Please don’t take offense. I view every wine as a learning curve of what I enjoy and don’t enjoy. My tastes have certainly evolved over the years. I’ve learned to smell and taste different flavors and textures (this thread taught me ‘chewy’). You have one of the best PN I’ve ever had and I will continue to try each offering. Please see the thread for the positive and how much we truly enjoy your wines.

I have had some luck with using the Molly Dooker shake on the Roman Reserves in lieu of lengthy decanting. Maybe that will work for you?

@winesmith I should mention, the wax on the top of the bottle was brutal! I think you may have mentioned sometime (but perhaps a different wine) just pulling the cork through the wax, but I wanted to be able to see what I was working with (the cork) and was afraid it would get shredded trying to pull through that wax. Once I got the top of the wax cut off, I just used an Ah-So to extract the cork (it was in great condition). The wine was superb.

@chefjess @Mark_L You do not need to rush to drink your Wellingtons. The Cabernets - especially Mohrhardt Ridge - will start to get into their prime windows at 11-14 years of age. Then they’ll last a long time after that. The only things I’d be in any hurry to drink (a relative term, to be sure, since there’s no rush) are the Meeks Zin and Englandcrest/Charlie’s Corner Syrah. The Estate Zin and Syrah will age for as long as the Cabernets and the Victory will go even longer.
Also, check on CellarTracker. You can see that many of us write notes as we try various vintages of everything. I often include notes of when to try my next bottle.
(Of course, taste being a personal preferences thing, you might prefer your wines more fruit forward and less complex. In which case, drink sooner!)

Thank you. I’ll hold on the Wellington month as I really do prefer more complexity. I have been holding most of the Wellingtons thinking they would age as I seem to have an abundance of Cabs and Victories. Found several Estate Syrahs/Zins in the bunch. Reading the thread with the 2020/2021 windows I panicked. I was moving things around with all of these recent offers arriving and have found so many treasures from the days of ww. Brings back fond memories and a little fear hoping the windows have not closed.

Knocking down an ol bucket of chum with some pesto chicken cause Basil seems to be growing like weeds around here! Big boned with some oak but the tempranillo is upfront and mouthwatering juicy acid keeping it bright.

I was surprised to find it rolling around along with a bunch of other bottles I had forgotten about, which have likely been exposed to suboptimal temperature conditions at some point in time. I still have one more…
That said, the cork was intact, nose primarily dark cherry, “dirt”, and some herbal notes (I’ll go with tarragon, maybe basil). Palate has little dark fruit, earthy notes, and something somewhere between herbal and medicinal (but not in a bad way). Kind of that tarragon, slightly licorice range, maybe a bit menthol? Definitely still some tannins. Medium finish. Better with food than without. By night 3, there’s no discernable fruit, mostly earthy. I wonder if @lucasmeeker has any of these left or has opened one recently and can chime in???
I wonder what other treasures are lurking in storage I’ve not looked at for a long time? Sadly, I suspect there’s a bunch that will not be good anymore.

I wouldn’t be surprised if it still hangs on and is interesting for another 10 years or more, but it’s not one that has performed like the 05 Four Kings, for example.

2016 tercero aberration last night.
Served chilled as @tercerowines suggested. Fun and everyone enjoyed. It certainly had a ‘swiss chard’ thing going on for me. Brightly acidic, a little green. High red fruits as well.
I still have some more of this 2016 aberration for purchase - and even a few Magnums, too! Watch for my first barrel-aged Cab Franc in 2022 - and nope, not on #casemates (sorry) . . .

@chefjess I was thinking of you when I pulled the Roman Reserve. While there is a little more earth and a little less fruit than I remember, still an extremely enjoyable bottle and a good food wine. Did not decant, just PnP.
We used a filtered pour spout for the Two Jakes Roman CF, which had a fair amount of sediment.
All wines sourced from either WW or CM with the exception of the Tank Garage Truth or Dare (Invino) but it was theTank Garage Skin Flick wine on Casemates that introduced me to the label in the first place.

Thank goodness he had his ax with him that night. It was an amazing experience. Hearing a Beethoven symphony played by a trio is a whole new way of listening for me, though apparently back in the day it was common that when these works debuted, they circulated among small ensembles before they made it to an orchestra. I had no idea.
Maybe the best part of the evening, when they came out for their encore, they launched right into Beethoven’s Fifth. The audience chuckled. So familiar! They must be joking. But they tore through that whole first movement. I could still hear the orchestra in my head attimes, but what was coming from the stage was riveting.

Yeah I noticed you could almost walk there Andrea and I were discussing it and it was easily in the top 3 or 4 restaurant meals we have ever had and it was takeout! Really easy to heat and fun put together when I got it home. I added the Charcuterie plate and it was fantastic. We have paid a hell of a lot more for dinners that were not half a delicious! Of course depending what you like to eat ymmv. If they are still doing Spain I would run not walk to get it, we may do it again if still available (I noticed they sold out the week before when I tried to get it)

2020 Briceland Vineyards Rosé Pét Nat d’Orleans Ishi Pishi Ranch, Champagne blend
with some tricked out Berserker Blend Burgers; almost crunchy on the surface while bright red and juicy in the center, some truffle, gorgonzola, Alderwood smoked salt, grilled onion, garden tomato and lettuce to fill out the toasted bun. The Ishi Pishi was a great pairing.

Easy flaming hot carbon steel pan crisps up the crust for 1.5 -2 minutes the first side second side
1 minute then into the oven to finish.
