Need to dial back the sous vide a bit; too pink, not enough red!
@rjquillin Well done - but 51.5 seems rather cool to have the meat be pink rather than red. I’m confused! Unless you’re finishing on a grill - that brings the final temp up a few degrees.
We did a 2" thick rib steak last night sous vide at 51.5 (or normal for torch-finishing is 55-55.5). About 12 minutes or so on the grill to get a nice crust, with lots of flipping, and it was perfectly cooked. Not a large ring of overcookedness on the outside either.
For a belated birthday celebration with family tonight: 2013 Iron Horse Brut, which was lovely as an aperitif and with the soup.
With the grilled, marinated butterflied leg of lamb, we drank 1982 Leoville Barton. Low neck fill. It was gorgeous: still significant black currant fruit on the nose, mixed with cedar, leather, a hint (but just the tiniest hint) of tariness, bergamot, and heather. Color very nice; not a hint of brownness at the edge of the glass. Nice rich entry, combined fruit flavors. good mouthfeel, though a touch more acetic than ideal - on its own only - this was not at all the case with the lamb, where the acid cut the fat and blended spectacularly. Tannins softened, almost completely resolved, but with a very, very long finish. A really lovely Leoville at just a touch past its peak. If you’ve got this in your cellar in 750s, it’s probably time to drink it now and for the next few years. In larger bottles it should be at absolute peak now, holding for several years, and good for at least another decade.
I’ve had some 1982 Bordeaux that did not live up to the reputation of the vintage, especially around the 20 year mark, but this wine was a real treat for all of us. Not, in my view, the equal of the 1970 or the 1961, but a very fine, mature 2nd Growth.

I’m curious for your thoughts on 1995 First Growths. I’ve got a couple bottles of Mouton Rothschild and I want to make sure they get their due.
@klezman I would keep them at least until 2020 or 2021. Try one then (whichever has the lowest fill) and judge likely condition of the other bottles from there.

@ScottW58 LOL Yes indeed! We’ve been going crazy with the IPAs, the DIPAs, and of course the Roses (it was hot in Montreal!) We just got a bunch of Roses today for future picnics, and our hosts here bought us a nice sampling of beers, so our cooler will be well stocked for our next stop in Western Mass.
As an aside, if any of you-all should ever find yourself in need of a spa experience in Montreal, check out Bota Bota. It’s on a reclaimed ferry, docked in Old Montreal. Fantastic experience, so relaxing. We enjoyed a glass of an undistinguished Rose along with our light repast. Nobody cared that the wine was forgettable. In fact, don’t go to Montreal without your bathing suit. Thank me later.

In Burlington, we’ve had elevated versions of pizza, burgers, and barbecue, and for the most part, local beer to go with. Tonight was the exception – despite the nice beer list, the meal demanded wine.

2013 Maryhill Winemaker’s Red at dinner, followed by a thimbleful (so far, at least) of 2013 Kacaba Cab Franc ice wine, with which we were recently reunited after some months of its sheltering in Buffalo chez@bahwm and @ddeuddeg.
OK, so this otherwise delightful newish Szechuan place could have done a little better on the glassware, but we keep our expectations low in local places when the corkage is reasonable.
Up in the woods, we drank a 2012 Wellington Victory with fire-grilled rib steaks. Day 2 it had picked up some oxidation, but day 1 it was delicious. Needs some time.
Then we had a bottle of 2015 Woodbridge Winemaker Select Vermentino that we picked up on the Tour this year. Just what we needed after a day of hiking with the kiddo on my back. Car camping lets us have nice cold packs, and it was delightfully chilled.
Saturday night a group of us got together to taste 4 decades of California wines! Lots of fun and not one corked or off bottle believe it or not

I remember that 77 Beringer PR - a really nice wine in what was generally a disastrous year. (Inglenook also made a fine Cab that year).
How was the 69 Krug? I remember that as a thin wine in its time and the vintage as relatively weak between the elegant '68s and more powerful, long-lived '70s.
Curious for notes on all of these… I’ve had both really good and dead bottles of the '72 Heitz. Another standout wine in a generally poor vintage (possibly the weakest in California in the 20th Century post-Prohibition)
I didn’t have a lot of the '73 Montelena, though the bottles I’ve had were impressive. The '73s generally did not get the hype of '70 or '74, but most of the better Cabs were well balanced and well structured for long aging. I had 73 Inglenook Cask (Jon Richbug’s first year making it) that was delicious through about 2010, but is mostly gone now, and both the Beaulieu and Cabernet Bosche were lovely in their 20s and early 30s.
I don’t have a specific memory of the 62 Martini, but the '61 was fine in the late '70s.
@rpm Funny you mention the 69 Krug was thin back in the day because everybody agreed it is still a bit thin although still drinkable. The 77 Beringer was drinking very well and still had a bit of tannic grip and a good purity of red and black fruit, mostly red. The 62 Martini was unbelievably the only wine with any fading at the rim and was fully resolved but quite delicious and was even better a couple hours in!? In fact all of them benefited from more air.
The 72 Heitz and the 73 Montelena were both fantastic wines!, I wish I took pictures of all these wines in the glass perfect color and no fading at the rims (and I looked) all of the Heitz even the 72 had that beautiful eucalyptus minty thing going on and were perfectly balanced and I don’t think the 91 and 92 were very good vintages? (I was happy tho as they were my contribution )
The 75 and 85 Phelps were both very fine wines with the 85 being best imo. The Heitz sherry was silky beautiful and carried the 18% ABV like it was not ever there.
Also remember none of these wines broke 13.2 ABV with most being inbetween 11.5 and 13 ABV, yeah yeah I know And just as important imho all of these wines were bought on release and kept in perfect provenance until we drank them. A couple of them came from my friends cellar well his grandfathers cellar that he dug into a hill in his back yard where he kept his collection of DRC etc with $7 to $15 price stickers on them
I would be hard pressed to name a wine of the night just because all were so balance and offering so many flavors and nuances. I have always felt that when I drink a great white it always impresses me more than a great red, maybe because I expect less? And that 72 Stony hill did not change my mind. I think it was as close to a perfect wine as i have ever had. It was still spicy bright with apples hints of lemon a bit of wax stony minerals and so bright on the palate. In fact now that I am thinking about it again i’m going to find some and buy it
Oh and sorry about my writing skills/punctuation as I am neither well schooled or intelligent but I love fine wine dammit!
@klezman the Kalin was delicious as was the 84 Lauer disgourged in 2017 although the Lauer was drier than a bone. Oh and the Gun Bun was drinking pretty young and very well.

Thanks for the heads up. I just had power issues while on vacation and my wine fridge lost power. Wine sat in an 85 degree house for 3 days, Congruence among them.
Wrote and heard back from him. He has 08, 09, 11 reg &reserve, and 14 rusty and ginger cuvée. Same pricing as recent 08/09 deal with big discounts for 5 or 10 case purchases. Too bad none of you are in the northeast.

@bolligra It was great! I had labeled this one as “drink first”, which usually means it got exposed to too much heat somewhere along the way. Even still, it wasn’t quite as fantastic as some prior bottles but it was still in great shape and offered plenty of nuance.
Montreal is full of wonderful byo places. If you ever find yourself on the Plateau and want a classic French meal, check out the Petit Plateau. We opened a Paetra Riesling to start, and switched over to the same Rosè we’d had the other night, to accompany our lamb and duck main courses. A lovely, relaxed, neighborhood restaurant that I’d wanted to try for a long time. The food was excellent.
I know what I wish I was drinking. Some sparkling wine. It’s been a while since you offered the great Gruet line. How about some Napa Valley sparkling offerings?

Well since one of their wines were just up here and people are whining about the high alcohol and PH in the thread i’m drinking this and it’s freaking delicious great right bank blend 40% cab franc and 60% merlot
2014 Vina Robles Petite Sirah, Paso Robles, Estate bottling. A nice, intense PS, with full body and fruit that balance its high (15.1%) alcohol. If Casemates offered this at $19 or less per bottle (case price), I’d definitely be in for a case.
Finishing off the 2014 Harvest Moon Pinot Noir we didn’t quite kill last night. I’m sure I’ll open something else too, since it was just 1/3 a bottle remaining.
An Argentine Malbec, 2105 P15. Unlike most Malbecs from Argentina, it’s from Patagonia, not Mendoza. It’s not as dark or intense as many Malbecs, but it went well with pizza. On my scale, it got three stars (about 90-91 on the scales of most of the wine mags).
Found some little 375’s at my local Costco so I thought I would try one. Woof it’s still a bit tannic but hopefully some rib eyes will balance it out a bit. Couple more years i’m thinking…
Started the evening with some WhistlePig Boss Hog. Delightful! Then opened a bottle of Under the Mistletoe to cap the night. Talk about a QPR bargain! Seems like it is in a good drinking window now.
@CorTot Both were delicious. Just reopened the Navarro when I got home. Less funky, more bloody. I like this wine.
The Tercero was good…the PS funk was more in control this time compared to last time.

Definitely picked up some heft over the evening. Last few sips are about to go down.
@radiolysis my first CT note, 2016.12.31 was Good now, high acid, should be better with time. I’m lax on accurate tracking, but much more integrated now, (2nd bottle and doesn’t need a food pairing,) but with a light pasta dish, and solo after I ran out of food, and it’s mellowed out as I had expected/hoped. Fruit is still right there, just not overly complex.
It seems I have a case+ remaining, so perhaps I need to step it up a bit, but still not in any hurry.
Last night and tonight - Israeli and other wines from a tasting I hosted. WOTN for me was an almost toss-up between 2015 Rhythm Wine Co. Enz Vineyard Mourvedre (vines planted 1922) and 2014 Tzora Vineyards Judean Hills Red (CS, Syrah, PV, and Merlot). The Tzora beat it out for me because it was more balanced and ageable. For immediate drinking, though, the Mourvedre edged it out.
2008 Scheid Vineyards Chardonnay
Not sure how it was when purchased in '11, but it’s a nice bottle at this point, perhaps due in large part to the Stelvin closure. Stone and tropical fruits with a bit of melon, somewhat creamy mouth with a touch of barrel and enough acidity to keep it clean.
@jmdavidson1 Really good! Break out your best beef she is just now getting to the sweet spot. A beautiful mix of red and black fruit. They were delicious young but getting special now…well other than the corked one. And maybe even better in 5 to 10, I will wait a few years to drink my last one.
2006 Eagles Trace Latitude 38, 90 minute decant - phenomenal just by itself, think I’ll bring a bottle to a friends birthday steak cook out tomorrow - probably even better with some beef.

@klezman No more than 3 minutes per side, likely closer to 5 minutes total. Grill temp, per the thermometer in the cover, was 260~275.
The corn was sweet and plump, also done on a shelf on the grill.
It was a great night and I am thankful! Now to sleep…

I think it was as close to a perfect wine as i have ever had. It was still spicy bright with apples hints of lemon a bit of wax stony minerals and so bright on the palate. In fact now that I am thinking about it again i’m going to find some and buy it
Oh and sorry about my writing skills/punctuation as I am neither well schooled or intelligent but I love fine wine dammit!

How was that 1988 Kalin? I had a 1980 Kalin Cabernet at about 30-32 years of age and it was fresh as could be.
@klezman the Kalin was delicious as was the 84 Lauer disgourged in 2017 although the Lauer was drier than a bone. Oh and the Gun Bun was drinking pretty young and very well.

Thanks for the heads up. I just had power issues while on vacation and my wine fridge lost power. Wine sat in an 85 degree house for 3 days, Congruence among them.
Wrote and heard back from him. He has 08, 09, 11 reg &reserve, and 14 rusty and ginger cuvée. Same pricing as recent 08/09 deal with big discounts for 5 or 10 case purchases. Too bad none of you are in the northeast.

@bolligra It was great! I had labeled this one as “drink first”, which usually means it got exposed to too much heat somewhere along the way. Even still, it wasn’t quite as fantastic as some prior bottles but it was still in great shape and offered plenty of nuance.

2011 Vellum CS (NV)
Montreal is full of wonderful byo places. If you ever find yourself on the Plateau and want a classic French meal, check out the Petit Plateau. We opened a Paetra Riesling to start, and switched over to the same Rosè we’d had the other night, to accompany our lamb and duck main courses. A lovely, relaxed, neighborhood restaurant that I’d wanted to try for a long time. The food was excellent.

2014 Vina Robles Petite Sirah, Paso Robles, Estate bottling. A nice, intense PS, with full body and fruit that balance its high (15.1%) alcohol. If Casemates offered this at $19 or less per bottle (case price), I’d definitely be in for a case.

Finishing off the 2014 Harvest Moon Pinot Noir we didn’t quite kill last night. I’m sure I’ll open something else too, since it was just 1/3 a bottle remaining.
For the past few days, some interesting beers. VT, it’s a hotbed of brewing.
An Argentine Malbec, 2105 P15. Unlike most Malbecs from Argentina, it’s from Patagonia, not Mendoza. It’s not as dark or intense as many Malbecs, but it went well with pizza. On my scale, it got three stars (about 90-91 on the scales of most of the wine mags).

Found some little 375’s at my local Costco so I thought I would try one. Woof it’s still a bit tannic but hopefully some rib eyes will balance it out a bit. Couple more years i’m thinking…
Started the evening with some WhistlePig Boss Hog. Delightful! Then opened a bottle of Under the Mistletoe to cap the night. Talk about a QPR bargain! Seems like it is in a good drinking window now.

Good now, high acid, should be better with time. I’m lax on accurate tracking, but much more integrated now, (2nd bottle and doesn’t need a food pairing,) but with a light pasta dish, and solo after I ran out of food, and it’s mellowed out as I had expected/hoped. Fruit is still right there, just not overly complex.
It seems I have a case+ remaining, so perhaps I need to step it up a bit, but still not in any hurry.

Last night and tonight - Israeli and other wines from a tasting I hosted. WOTN for me was an almost toss-up between 2015 Rhythm Wine Co. Enz Vineyard Mourvedre (vines planted 1922) and 2014 Tzora Vineyards Judean Hills Red (CS, Syrah, PV, and Merlot). The Tzora beat it out for me because it was more balanced and ageable. For immediate drinking, though, the Mourvedre edged it out.
1999 Sassoforte Toscana IGT. Beautiful CS, well within the drinking window of deliciousness. No bricking. Outstanding with prime rib roast.

2008 Scheid Vineyards Chardonnay
Not sure how it was when purchased in '11, but it’s a nice bottle at this point, perhaps due in large part to the Stelvin closure. Stone and tropical fruits with a bit of melon, somewhat creamy mouth with a touch of barrel and enough acidity to keep it clean.
