Complex, aromatic, scintillating white wine. The nose is bright, pure focus, and explodes with notes of lemongrass, meyer lemon, yellow grapefruit, pear, jasmine, chalky soil, and sea breeze salinity. Makes you want to just keep smelling it! The palate displays saline character, layers of citrus, green apple, and white peach. Excellent balance between texture, minerality, freshness and long finish. It is brisk and mouth-watering.
Recommended Food Pairings: Caesar’s Salad, grilled white fish, oysters (Yannick’s favorite pairing), seafood, sushi, and if you feel a little adventurous, try it with spicy Asian or Indian food…Simply delicious.
Vineyard
Situated on the highest slopes in Gascony (180 meters altitude). Vines between 15 and 40 years old. Most of the vines face due south, allowing the local winds to dry much of the moisture. Cool nights help preserve the crisp acids, but the juiciness shows from the low-yielding Colombard and Sauvignon Blanc vines.
Winemaking
Skin contact maceration for 5-6 hours. Cold Fermented and aged in stainless steel tank for 5 months on the lees with lees stirring to provide roundness and balance.
Story
Story: Son Of a Butcher White is a little “sibling” of our highly acclaimed SOB Red Blend. Incredible but true, Yannick Rousseau made this delicious White wine in the South-West of France and is the result of the selection of the best vineyard blocks of Colombard / Sauvignon Blanc, traditional winemaking, and precise blending. It has Old World Character combined with New World Spirit.
Specs

2022 Y. Rousseau. Son of a Butcher Rosé
Tasting Notes
Pale salmon color. The nose offers suggestions of watermelons, white nectarines, fresh raspberry, Mirabelle plums, and white flowers. Feels like summer in a glass. The palate is medium body
and polished, with a textural elegance alongside salted minerals and saline notes. Notes of blood orange, and pink grapefruit. The bright, long finish is clean and thirst-quenching.
Vineyard
Hillside vineyard with perfect southern exposure (facing the majestic Pyrénées mountains) helps produce wines with characteristic freshness and elegance. The most crucial aspect is for Yannick to begin in the vineyard, farming the grapes specifically for rosé. On hot afternoons, the steady breeze from the West takes the bite out of the summer swelter, refreshing the vines. The temperature plunges when the sun sets. Cool nights help keep the acids firm, but the juiciness shows from the low-yielding Tannat, Cabernet Franc and Merlot vines.
Winemaking
Light skin contact maceration. Made using the traditional press method. Fermented and aged in stainless steel tank for 5 months on the lees with lees stirring to provide additional richness.
Story
Son Of a Butcher Rosé is a little “brother” of our highly acclaimed SOB Red Blend. Incredible but true, Yannick Rousseau made this delicious Rosé in the South-West of France, and is the result of the selection of the best vineyard blocks of Tannat / Cabernet Franc / Merlot, precise winemaking and meticulous, yet creative blending. It has old World Character combined with New World Spirit.
Y. Rousseau Wines is a dream that began long ago in the South-West of France and continues to grow and evolve today. Yannick Rousseau, French native, founder and winemaker, followed his heart and passion for winemaking all the way to Napa Valley where he met his Texan-born wife, Susan. The two of them bring their combined entrepreneurial savvy to embrace the ebbs and flows of running a family winery with the legacy of their racines, hospitable style, and discriminating artisanship.
Yannick’s reputation has been made not by following in anyone’s particular footsteps but rather by taking what he has learned from great mavericks and integrating it into what he discovers to be true. His history of working with grape varietals from the Southwest of France is well known. Now, he carries forward his winemaking mission still embracing Colombard, Tannat and other favored varietals and blending them to create revived, and even edge-bending wines.

It’s always an honor and pleasure when a Lab Rat wine shows up. Imagine my glee when I discovered 2 bottles. Oh boy! Both went into the fridge for a while. Our palates were a little fatigued from a multi-wine/course Burgundy dinner the previous night, but as a faithful Lab Rat, I dutifully opened both chilled bottles for a taste.Talk about appropriate wines for the season, as we just had Summer Solstice this week, and these two wines scream Summer in a glass! Both are absolutely refreshing, and perfect to jumpstart and awaken your taste buds.
My spouse had made a spicy shrimp stir fry for dinner, so un-intentional pairing we did. Both wines paired nicely with dinner, and we saved the remaining portion of the bottles for the next night- screw caps aren’t romantic, but sure are handy for this.
On Friday, we tried both wines with an assortment of cheeses, smoked salmon, and a clam linguine entree with red sauce. Also very nice pairings. The white paired better with the red sauce than the Rose. I think both of these would pair nicely with a lot of Summer foods. Think salads, grilled veggies, chicken and fish.
Y. ROUSSEAU Son of a Butcher White (Colombard / Sauvignon Blanc)
Color is a clear, VERY pale wheat yellow.
Nose- Freshly picked grapefruit and other citrus. A wonderful symphony of grapefruit, lime, lemon balm and hints of fresh apple.
Palate- Beautiful balance and not overly sweet and nicely dry. Granny Smith Apple, citrus, and wonderfully fresh.
Decent acidity, seems more so than the Rose.
Y. ROUSSEAU Son of a Butcher Rose (Tannat / Cabernet Franc / Merlot)
A very light salmon color.
Nose- Apricot, honeydew melon, and strawberry. My wife says it reminds her of a bouquet of fresh wildflowers.
Palate- Nice bright and silky mouthfeel, wonderfully dry and crisp, with good minerality. Freshness radiating like Summer sunshine. Fruits on the nose follow through to the palate.
We loved both of these wines, and are definitely in for a case. Great summer bang for the buck!
2022 Y. Rousseau. Son of a Butcher White
Bright tart lemon, peach, and grapefruit with some accompanying bitterness. Grassy, mineral, and vaguely nutty. Med to dry, fruity, and salivating. Long finish. Slight effervescence. Perfect for a cool summer evening. I found it similar to some good vermentino’s I’ve had. A lot going on for a $10 to $12 bottle or even the listed $20. We really liked this one.
2022 Y. Rousseau. Son of a Butcher Rose
Super light, floral, dry, and refreshing. In the background, watermelon, white cherry, grapefruit, and a touch of orange peel. Suitable for a hot summer day. Much simpler than the white. Drink this one first if tasting both.
I like this offer. Both quantities are well priced, you have two wines that are very different, and yet both great summer wines in their own way. The white could go in an Y. Rousseau bottle priced a bit higher and I don’t think too many would be let down. I missed the last couple offers from this winery and I’m starting to regret it.
Curious why winemaker didn’t jump on here all weekend. He’s been on here many times before. Would be great to hear from him. I need a little push. Just sayin

I really have been enjoying the whites in this split case. The rose is good but not my favorite rose yet very drinkable on the steamy summer days.
