Tasting Notes
This is a typically rich and intense Cinsault that explodes strawberry rhubarb pie in the glass. The ancient vines produced a Cinsault with great concentration - lots of juicy black cherry, rhubarb, and plum, with notes of vanilla from extended barrel aging. For those who are not familiar with the flavor characteristics of Cinsault, it has the elegant weight of a Pinot Noir with the fruit-forward attitude of a Zinfandel (and mix in a dash of Rhone spice too!).
Vineyard Notes
The Bechthold vineyard is the oldest vineyard in the Lodi region, planted in 1886. It is the oldest Cinsault vineyard in the world! The old vines are head-trained, organically grown, and dry farmed. Jillian was introduced to this vineyard in 2001 and has been working with the fruit ever since. The Onesta block is on the east side of the vineyard where the vines produce the most concentrated fruit in the whole vineyard.
Vinification
100% old vine Cinsault from the famous Bechthold Vineyard in Lodi. The perfect recipe involves gentle handling, saignée, cold soak, raging fermentation, extended maceration, and 18 months of aging in neutral French oak barrels.
Growing Season
The 2022 growing season was a tale of two harvests, with a heat wave throwing a curve ball in early September. Luckily, we harvested the legendary Cinsault before the heat wave. The Cinsault grapes came in with refreshing acidity and beautiful full clusters of juicy red fruit. It was the perfect vintage to call it our last.

Grilled pork tenderloin, roasted chicken, margarita pizza, smoked baby back ribs, chocolate cake, or Thanksgiving dinner.

Jillian found her passion for wine while studying neurobiology at UC Davis. Home brewing introduced her to the magic of fermentation, and after taking the “Introductory to Winemaking” class at UC Davis, she quickly switched her major to Viticulture and Enology. She graduated with her degree in 2001 and soon thereafter found herself as an intern at the famous Bonny Doon Winery.
Her desire to learn more about winemaking has taken her around the globe. To gain essential winemaking experience in a short time, Jillian traveled to the southern hemisphere to work an additional harvest each year. For three years she traveled south to learn how to work with different varieties and observe different winemaking styles. She did internships in McLaren Vale (South Australia), Margaret River (Western Australia), and Stellenbosch (South Africa).
Syrah quickly became her deepest passion and she returned to Bonny Doon as Associate Winemaker in 2005, focusing her talents on the Rhone varieties that the Dooner is known for. She played a major role in the transition to biodynamic winemaking at Bonny Doon. Now a truly seasoned winemaker, Jillian has started her own passion project, Onesta. Her artistic expression is manifested in her wines. Jillian’s wines speak the truth of each growing season and each vintage is a new adventure for her, riding the waves of Mother Nature. Her promise to herself and her customers is to deliver wines with personality and depth every year. Jillian’s wines are made with passion and love, just like she lives her life. Jillian, are you retiring more generally or just winding down Onesta? Where’s the rest of the Onesta wine? Are you still working with that wine-in-a-can company?
I am not retiring—that’s still a long way off for me. I work for a company based in Bordeaux, France, as part of a team of winemakers consulting with wineries worldwide. My focus is primarily on the West Coast of the U.S. The work is confidential, cutting-edge, and deeply rewarding.
We collaborate with wineries across the spectrum—from those producing 100-point wines to those making boxed wines—each with its own unique challenges. That’s why my handle is WineDocNapa. While I have expertise in preparing wines for canning, I haven’t personally produced canned wine.
Onesta has been my passion project and side hustle, bringing me immense joy over the years. However, after my mother’s sudden passing in 2022, my perspective on life shifted. That same year marked my 20th harvest working with the Bechthold Vineyard—a meaningful milestone that felt like the right time to step away.
Rather than spending my free time making and selling wine, I want to immerse myself more in nature—open-water swimming, hiking, and community. My role with the French company is more than enough to fulfill my winemaking passion. One of my core values is helping others, and being a technical advisor in the wine industry allows me to do just that.
Good Eve CaseMateys!! It’s been far too long; my apologies. Life has been busy of late, and after a Dry January, I’m still not caught up to where I should be. WineDavid (and Alice) can always be counted on to lend a helping hand, thus - a bottle of Onesta Cinsault showed up on my doorstep last week. And when they call, I answer.
As WineDavid knows, I’m a big fan of underappreciated varieties… and this bottling is legendary status at Casemates. I’m truly humbled to be ratting the final Onesta Bechthold CInsualt offering!
I cracked the bottle Friday late afternoon (five o’clock somewhere) and went to work.
The wine has a delightfully pretty, translucent garnet hue.
The nose is quiet… a whiff of a kirsch-y Jolly Rancher.
But nothing quiet about this wine on the palate. It’s big and rich. Kind of like the country duo. Lots of red fruit, but leaning crisp and tart. Being raised by midwestern parents, I’m no stranger to rhubarb pie. And this wine has that tart rhubarb flavor, with a backbone of red berry compote. A tad spicy with subtle structure and a medium finish, this wine is REALLY EASY to drink. And drink it I did.
I did save a glass of and a half worth for evening two, when I found the wine to be in a similar spot, though the nose was much more expressive and the tartness had softened to make it even more palatable.
End of the day- extremely quaffable wine from an uncommon variety grown at a significant/historic Lodi vineyard. Final offering from Onesta! And a no-brainer at the Casemates price.

We received a bottle of this in the 6 bottle mystery purchase just recently, and it was the first thing we tried. Quite impressive, much bigger and assertive (as in the rat above which I agree with entirely) than earlier offerings, and yet extremely drinkable. Happy to see it being offered here. We’ll be in for a case, and hoping to see a final offering of the Cinsault Rose - thank you Jillian for the unique wonders from your winery!

I wonder how this compares to the 2021. I had one of those a few days ago and it was wonderful. I’m way overstocked and wish the 3-bottle upcharge wasn’t so high. I need to think on this one…
I really liked this wine! Thanks Alice for the chance to Rat again and so grateful for UPS for finally brining me the bottle after we thought it had gone astray.
First notes on pop and pour were a little tight and so I took a few sips and walked away - I love Cinsault and have been fortunate to have tried several in the past when I worked for a wine distributor. on P and P, it was pretty tight but showed a light weight, good acidity and lots of fresh berry notes.
after a few hours day 1, it was more balanced with notes of bright cherry and strawberry, maybe even a hint of melon, really good food-pairing weight and a nice pop of acid on the finish. I had it at a good probably 55-60 degrees temp but I think it would be as good or better even cooler. We had it with grilled pork tenderloin that had a bit of penzey’s spice on it, and it handled it really well.
Day 2 was where this wine really showed out. The change in depth was really awesome, as the wine itself even looked darker, which I know probably was a trick due to the flavor change… But it had developed a lot more depth of flavor and was richer, rounder, with bolder cherry and now a raspberry nose. I had it with some chocolate also and it was really great. This is a really delicious food wine, especially for people who grill a lot.

My love for Bechthold began in 2002 while working at Bonny Doon Vineyard, and in 2009, I launched Onesta with the dream of sharing unique, expressive wines with enthusiasts like you. The Casemates community quickly became my favorite audience—your curiosity, thoughtful reviews, adventurous pairings, and, of course, the endless GIFs have made this journey unforgettable. Your enthusiasm has meant the world to me, and I am forever grateful for your support and love of my wines.

I never had Cinsault before finding yours here and while I’ve now had others your ancient vines and winemaking skills make Onesta the best. It quickly became a favorite of my wife and I and my kids who developing their wine tasting chops.
P.S. At your suggestion I picked up a few bottles of your Syrah but have not tried it yet.
Yikes, I checked my overflowing wine stash and I see a on a lot of 9 bottles consisting of 2012 & 2013. My notes indicated that I had high praise on what I drank. Now I wonder how they are holding up. But lately, I’ve passed
on a lot of great Casemates wine the past two years. But with Jillian moving on in life, I will honor her dedication by hitting the BUY button. Plus, I need to find those 2012 & 2013 bottles later today. I can’t guarantee that I’ll chime in later in this offer. Being retired since 2015, I still stay busy volunteering in a Horsemanship Program for VERY SPECIAL children, camping, fishing, working in the yard, and traveling more now that the wife is also retired!

Is the vineyard Bechthold, or Bechtold?
I see the rosé is entered in Cellar Tracker with the latter spelling while all the others with the former.
Seven vintages of the Cinsault from '13 to this offer, and some '18 of the rosé.
An age-old question for you: what’s the drinking window for properly cellared bottles?
I seem to have problems with them getting stashed and not clearly visible as a reminder to pull a cork!
Our wines have incredible longevity, due to long lees aging. The Rose is best when consumed within 3 years. The Cinsault holds up really well for medium bodied red wine. The 2013 is still tasting delicious.
I don’t order as much as I wish I could, but Casemates got me with Qupe a few months back and now with a final offering of Onesta Cinsault, which I have ordered twice in the past and thoroughly enjoyed. In for three! Thanks for the highly enjoyable wines that I never would have experienced without Casemates!

@WineDocNapa I have purchased (and still enjoying) 13 and 3/4 cases of Onesta wines here on CM! This includes the Mentida offerings. Favorites are the Cinsault red and rosé. We have discovered (surprisingly to us!) that your Cinsault red goes really well with rich Indian foods like spicy butter chicken. The 2013 vintage was particularly good with spicy Indian food. Onesta has become synonymous with “auto buy” for me.
I was able to introduce several family members to your Cinsault with that initial “delivered by Thanksgiving” offer where I took 4 bottles to Thanksgiving dinner at my in-laws. Everyone was surprised how good this wine was (which they had never of). I have also gifted bottles, along with the story of these Cinsault vines.
@WineDocNapa Ordered what makes my 11th case of Onesta wines. Have enjoyed every bottle we’ve opened so far. Was a wine club member at Bonny Doon for many years including Jillian’s time there before moving home to Montana from Pescadero, CA where the original Bonny Doon winery was the closest winery to our home and the site of many visits. This will be the 11th case of Onesta wines for me: Cinsault, Syrah, Rosé, Grenache Blanc, and Mentida-Red Blend. Mostly Cinsault. These were all really good wines. Thank you for introducing me to the Cinsault as a primary varietal in a wine instead of part of a blend. Enjoy your next chapter!

This offering, this thread, is emblematic, of this community. At its face, it is a place to buy great wine from small producers at a great price. But really, it is a much more direct connection between growers and winemakers and folks who want to experience a craft. I cannot but think fondly of being at Pedroncelli at 9am and having Jim Pedroncelli walking us through the vineyard talking about the grapes, the vines, the must that is at our feet. The same with Peter Wellington, and his willingness for us to break up in teams to do our own blending sessions while our creations are being evaluated by his expert tasting room folks - and then, blending and releasing the winning creation as a bottled wine. Watching a mobile bottling operation at work at Rob’s cousin’s winery. The joy of JOY at Iron Horse and her fantastic hospitality with her family. The music of Cecilia in Kent Rasmussen’s tasting room. Clark’s music, while we feasted at Scott Harvey’s house. Cathy Corizon and the wedding proposal. Ty Caton and all of the folks who showed up at La Travigne with lots and lots of bottles for our dinner. El Jefe, and so many, many more. I open their bottles and I thank them and this community for a cellar (basement) full of memories.

I don’t order as much as I wish I could, but Casemates got me with Qupe a few months back and now with a final offering of Onesta Cinsault, which I have ordered twice in the past and thoroughly enjoyed. In for three! Thanks for the highly enjoyable wines that I never would have experienced without Casemates!

@WineDocNapa I have purchased (and still enjoying) 13 and 3/4 cases of Onesta wines here on CM! This includes the Mentida offerings. Favorites are the Cinsault red and rosé. We have discovered (surprisingly to us!) that your Cinsault red goes really well with rich Indian foods like spicy butter chicken. The 2013 vintage was particularly good with spicy Indian food. Onesta has become synonymous with “auto buy” for me.
I was able to introduce several family members to your Cinsault with that initial “delivered by Thanksgiving” offer where I took 4 bottles to Thanksgiving dinner at my in-laws. Everyone was surprised how good this wine was (which they had never of). I have also gifted bottles, along with the story of these Cinsault vines.

@WineDocNapa Ordered what makes my 11th case of Onesta wines. Have enjoyed every bottle we’ve opened so far. Was a wine club member at Bonny Doon for many years including Jillian’s time there before moving home to Montana from Pescadero, CA where the original Bonny Doon winery was the closest winery to our home and the site of many visits. Best wishes for Jillian’s next phase of her career and life . Thanks for the enjoyment we’ve had from your contributions to years of our wine experiences.

This will be the 11th case of Onesta wines for me: Cinsault, Syrah, Rosé, Grenache Blanc, and Mentida-Red Blend. Mostly Cinsault. These were all really good wines. Thank you for introducing me to the Cinsault as a primary varietal in a wine instead of part of a blend. Enjoy your next chapter!

This offering, this thread, is emblematic, of this community. At its face, it is a place to buy great wine from small producers at a great price. But really, it is a much more direct connection between growers and winemakers and folks who want to experience a craft. I cannot but think fondly of being at Pedroncelli at 9am and having Jim Pedroncelli walking us through the vineyard talking about the grapes, the vines, the must that is at our feet. The same with Peter Wellington, and his willingness for us to break up in teams to do our own blending sessions while our creations are being evaluated by his expert tasting room folks - and then, blending and releasing the winning creation as a bottled wine. Watching a mobile bottling operation at work at Rob’s cousin’s winery. The joy of JOY at Iron Horse and her fantastic hospitality with her family. The music of Cecilia in Kent Rasmussen’s tasting room. Clark’s music, while we feasted at Scott Harvey’s house. Cathy Corizon and the wedding proposal. Ty Caton and all of the folks who showed up at La Travigne with lots and lots of bottles for our dinner. El Jefe, and so many, many more. I open their bottles and I thank them and this community for a cellar (basement) full of memories.
